Good afternoon, I wanted to share my favorite healthy recipe for waffles. They can be made less high in calories if you take low-fat cottage cheese, but then gently grease the panels of the waffle iron with butter (I do this with a brush). You can also use whole wheat flour instead of regular wheat flour.

Finely chop the cabbage, chop and grind with salt, wait until it lets out the juice. If the cabbage is not very young, then usually I chop it very thinly on a combine, then I chop it additionally.

Add eggs, cottage cheese and stir. I take dry cottage cheese, 12% fat, so there is no oil / fat in the recipe. If your curd is not greasy, do not forget to grease the panels of the waffle iron with oil, or add 2 tablespoons of vegetable oil to the dough.

The next step is to add flour. Its amount depends on the juiciness of the cabbage. I have very juicy, so I added 6 tablespoons with a slide (210 grams), if the cabbage is old, then you can add 4-5 and look at the consistency - the dough should be soft, not steep.

Heat the waffle iron, lay out the dough, not forgetting to leave room for the expansion of the dough when closing the waffle iron and during further baking. Bake on a temperature below average (on my Krups it is 3.5 out of 8 on a scale) for 8-10 minutes until golden brown.

Either leave the ready-made waffles to cool on the wire rack if you need them with you to stay dry and crispy, or serve hot with sour cream, yogurt, or generally with salt flakes, as my children do.

It seems to me that you can try, because I bake ordinary waffles in 4 out of 8 available modes, on these waffles I slightly reduce them.
Just remove the waffles when they are golden brown. Cabbage will grab in any case, and in the form of "al dente" cabbage goes well, unlike, say, potatoes. Experiment, write!

The recipe is unpretentious: you can change the flour to whole grain or add rye, add greens to cabbage, etc. - the most important thing is to grasp the consistency of the dough, in which the waffles will not float, they will keep their shape.
Instead of cottage cheese, by the way, ricotta cheese is suitable, only there will be less acidity.
I myself carefully use flour, so I put a minimum of flour, respectively, I take dry cottage cheese.
