Ingredients

FOR 8 PUBLIC
OPARA:
Leaven 50 g
Water 50 ml.
Flour 100 g
DOUGH:
Opara all
Warm water 170 ml.
Sugar 2 tbsp. l.
Salt 1 tsp
Flour 400 BC
Refined vegetable oil 6 tbsp. l.
SPRAY:
Sesame about 1 stack.

Cooking method

To begin with, we prepare a dough from sourdough, water and flour. When it reaches maturity (it starts to settle, by tapping on the bottom of the bowl), we proceed to kneading the dough.

It is mixed from the listed ingredients, with the exception of oil (add oil at the end of the batch)
The dough should be fairly tight and well kneaded.

We remove the bowl with the dough in a warm place for fermentation ..

While the dough is coming up, prepare the sesame seeds - fry it in a dry frying pan until light golden brown.

Well, the dough has come, we divide it into 8 parts .. Roll each part into a ball.

Then we roll each ball into a tourniquet 50-60 cm long. Fold it in half, intertwine, turning by the ends. and fix them in a ring.

Dip the formed bagels in cold water, then roll in sesame seeds.

Place the bagels on a greased or non-stick baking sheet

Proof the blanks (under the film)
Bagels a la Turkish simits

We bake bagels in preheated to 180-200 * From the oven until blush (25-35 minutes)
The baking time depends on the nature of the oven.

God, I had two packets of tea brought from Istanbul. Huge packs! I drank only it for a year. I brewed it like they did ... I didn't give it to anyone from my family. But it was already over.
This taste - simit and a glass of hot tea (I also bought this glass) on the ferry across the Bosphorus !!!

Marysechka, they put a teapot with tea leaves on a hot (boiling) teapot, a kind of two-story device they have. And you see it in the cafe. The whole thing is heated. More than we are used to ...
And I loved it so much!
It was their tea that I drank. Bought Turkish sheet in the supermarket. I brought it home.
I was very pleased.
Marysya27
Well, we figured out the tea, to recreate the authenticity of the perception of the components
atmosphere and taste

mamusi, if the consistency of the dough is observed, then it looks like. Such dry ones, not lush.

ANGELINA BLACKmore, Natasha, I'm bringing the report. Baked, but not as beautiful as you did, but tasty and airy. And you can ask why you need to bathe them in cold water? Did everything according to the recipe. Have already devoured everything. It didn't reach the tahina, there was little sesame.

And you can ask why you need to bathe them in cold water?
Hope, about bathing was written in the recipe, which was adapted for our yeast. I suppose for sesame seeds to stick.

My household swept away the bagels in the blink of an eye, and again demand. BUT today I baked wheat bread with it in water, with vegetable oil and the addition of flaxseed meal. Dough, on him, put yesterday afternoon. She put it to the radiator and wrapped it in a towel She had fun quickly. The gingerbread man was kneading with a bread maker. By evening the dough rose, but the oven was too late. Crumpled and put in the refrigerator. In the morning she put it on the table and after breakfast divided it into loaves. The dough plumped up quickly. Baked, smeared with milk. Very good bread.
And she did not promise bagels to her household. In my dreams, I still have cinnamon buns with cream cheese ... Probably, I’ll mobilize for the next beggar))

Nadyushich, Nadia, also could not resist? Prepared yummy

Yes, already as an itch to put a dough on something ... and now I'm thinking about maybe stirring up bagels again or something else. A very interesting idea to make buns.

The buns are good too. But ... They said that bagels are a little tastier
Push. When we twist the bagels, the dough is slightly denser due to the wrapping with dusting.
ANGELINA BLACKmore
I really like the crumb of bagels. And the taste of roasted sesame gives such a wonderful aroma and taste.
