calf brains 500 g
wine vinegar 2 tablespoons + 2 tablespoons l.
salt + sugar 0.5 tsp +1 tsp
red onion (or onion) 1/4 large onion

Cooking method

Rinse the calf brains well and soak in cold water for 2-3 hours, changing the water periodically. Some sources write: "Delete tapes", but I did not delete anything. There was simply nothing to delete.
Place the brains in a saucepan, pour about 1.5 liters of water, add 2 tbsp. l. vinegar (I have white wine vinegar, but table vinegar can be used). Pressure, Hi mode, 6 minutes. After the end of the program, I did not let off steam, left my brains in the broth to cool. I stretched the preparation for two days, but if the dish needs to be cooked quickly, then forcibly let off the steam, remove the brains from the broth and cool. If cooked in a regular saucepan, it will take 20-25 minutes.

Pickle the onions. You can do this in advance, 15-20 minutes in advance. Mix 2 tbsp. l. vinegar with 0.5 tsp. salt and 1 tsp. sugar, pour onion with this mixture.

Cut the cooled brains into slices 1-1.5 cm thick. Grease a baking dish generously with butter. Put the brains in a mold, salt and pepper.

Prepare the filling by mixing sour cream with eggs and seasoning with salt, pepper, garlic and bay leaf powder.
