  • Today is world bread day. So I decided to share with you my bread, with a somewhat unusual component for yeast bread.
  • For the first time I heard about adding soda to yeast dough, for Kazakh flatbread, from my mother's friend's daughter-in-law. And then she compared it with the fact that such a combination exists in Asian cuisine. And how do Kazakhs differ from Asians? So I went on to experiment.
  • So. Regular, everyday bread, from any ingredients, I cook according to the same principle.
  • Pour the liquid component into a bucket of bread maker, dilute the yeast, add salt, flour (not all, we leave it to adjust the bun) and turn on the program in which you knead the dough. In my Panasonic SD-2510 I do it on 21 programs "Pelmeni" or on program 17 if a bread maker Panasonic SD-2500 (I also have one). I won't tell you about others, I don't know. After the bun has formed, normal, as expected, turn off the kneading and turn on the "Basic bread" program. This is my first, for 4 hours. By pre-mixing, I allow the yeast to multiply and reduce the total amount when setting.
  • After the bread maker makes the first batch, after starting the program, and stops to rest, add soda. The amount depends on your sensitivity. I add, calmly, a teaspoon.
  • That's it, now you can safely leave your assistant and wait for a fragrant, tasty bread.
  • The color of the bread will be tanned. The crumb structure is denser and not as nostrilized as usual. I will like the taste. In any case, those who ate this bread with me like it.
