Sweet pumpkin bread by Leonardo di Carlo

Ingredients

Pumpkin puree:
peeled pumpkin 250 g
olive oil 33 g
salt 3 g
water 50 g
Dough:
pressed yeast 17.5 g
wheat flour of the highest grade 450 g
pumpkin puree 250 g
water 125 g
cane sugar 75 g
salt 11 g
olive oil 45 g
--------------------------
two forms 18x8x8 cm

Cooking method

  • Sweet pumpkin bread by Leonardo di CarloPeel the pumpkin, cut into small cubes. Place on a baking sheet and season with salt and olive oil. Bake in the oven preheated to 175-180C until soft.
  • Add water to the still hot pumpkin, puree.
  • Knead all of these ingredients into a soft, non-sticky dough (you may need a little more or less flour). Add salt and olive oil to the dough at the end of kneading.

Bread is like fluff - just weightless, perhaps next time I will bake buns from this dough. After defrosting pumpkin puree, the dough as in the recipe, only increased the amount of oil, but it was necessary not to do this. For myself, I would increase the sugar, because we did not have enough, perhaps the pumpkin was not sweet. Since there are no small forms of baked in ordinary ones, two not small loaves turned out.
