Pumpkin Lean Pies

Ingredients

premium wheat flour 500 BC
pumpkin puree 100 g
water 160 BC
vegetable oil 50 g
sugar 80 g
salt 2/3 tsp
pressed yeast 15 g
vanilla essence 3-4 drops
strong very sweet tea for lubrication

Cooking method

If the dough is loose, then it is possible that gluten is poorly developed due to undermixing, although it should then develop during fermentation. Maybe on the contrary you knead for a long time and it weakens. Perhaps the flour is weak, try changing it for another. Maybe the dough gets very hot when kneading. When baking, the temperature may also be insufficient. We need to check the oven.
You need to regulate the dough with water, not flour. The flour had to be put in as much as I wrote. Initially take water in a smaller amount, and add when mixing.
It seems to me that the proofing time should also be reduced.
There can be many reasons. You need to see and know your whole algorithm of actions.
