Universal mousse without eggs


Gelatin 5 g
Lemon / lime juice 25 g
Water eating gelatin 30 ml
Filler (fruit puree / milk / cream) 90 g
White chocolate 250 g
Cream 33-38% 100 g

Cooking method

  • A versatile mousse that can be of almost any flavor.
  • Let's look at the example of coconut
  • Heat coconut milk and 100 grams of cream to a boil and pour over white chocolate. Wait a couple of minutes for the chocolate to melt and beat with a blender until smooth. Add dissolved and warmed gelatin and lemon juice. Punch again. Cool to 32-35 ° and gently stir in the whipped cream. The mousse is ready to use.
  • Variations:
  • 1.with sour berry / fruit: remove the lemon juice and replace with fruit puree.
  • 2. Paraline: we take milk into the filler, instead of white chocolate we take 50% paraline and 50% black 50-60% chocolate. We warm up the paraline with milk.
  • 3.with sweet berry / fruit: prescription.
  • 4.with dark chocolate, reduce the gelatin to 2-3 grams (depending on%)
  • 5. When using fast-darkening fruits, immediately mix tx with lemon juice.
  • 6. Kiwi, lemon, pineapple and figs (my personal experience) must be boiled. Otherwise, gelatin won't work.
  • 7. The filling can be made from liquor.
  • 8. To reduce the sweetness, you can replace some of the chocolate with cocoa butter and remove the gelatin to 4 grams.

The mousse is convenient, almost universal, but requires a lot of chocolate. On the other hand, it is very easy to prepare and suitable even for a novice amateur. And, most importantly, no eggs (for allergy sufferers, pregnant women and small children).
