Cooking method

  • Prepare eggplants, butter, flour, mayonnaise (bonuses if you taste better with them), tomatoes and herbs.
  • Also a small bag and a toothpick. Then you will see why!

  • Cut the eggplants into slices, roll them in flour and fry on both sides. I don’t salt them beforehand because they become wet and unpleasant. Salt is usually to go away bitterness. But now there are such varieties of eggplant that they practically do not taste bitter. Add ready-made eggplants. We spread the fried eggplants on a napkin to absorb the excess oil.

  • We lay them out on a dish in which you will serve them and squeeze mayonnaise on each eggplant, if you use bonuses, then spread them with a spoon.

  • Cut the tomatoes into slices and put them on top of the eggplant with mayonnaise.

  • Now we take the bag and carefully, squeeze the mayonnaise into the corner of the bag (the bonus will not work, it will clog) we fold it as in the photo

  • You can eat it right away, you can let it brew. It is always delicious!
  • When guests unexpectedly come to me, I always cook these eggplants for a snack in 20-30 minutes. And if there are no guests, but I want to have a quick meal, then I also cook it, since now is the season for eggplant. Cook this dish with me, because it is fast, tasty and beautiful at the same time.

Once I worked in a restaurant (not as a cook, no) and learned this simple dish there. This dish was on the table at every banquet, because it is very easy and quick to prepare, but it was always eaten without a trace.
In the original, crushed walnuts in the sauce (I'm allergic), garlic squeezed through a crush (I don't like it), a couple of pieces of anchovies, ground (you need to buy a whole jar). I just do it with mayonnaise and it's still very tasty.
