Ingredients

Potatoes 4 things
Pork tenderloin 0.5KG
Mushrooms 0.5KG
Pickles 3 -4 pcs
Bulb onions 1 -2 pcs
Mayonnaise for the layer
Salt pepper taste

Cooking method

  • Boil the pork tenderloin in salted water with spices until tender.
  • We wash the potatoes, put them in a saucepan, fill them with water. We put on fire, salt and cook until tender. Then we cool and peel it.
  • Peel the onion and cut into thin half rings. We put it in a preheated pan with vegetable oil. Fry it until golden brown. Put the onion on a plate.
  • Cut the mushrooms into thin slices and also fry in a pan, in the same oil that the onions were fried. As soon as the moisture has evaporated from the mushrooms, we immediately turn them off and leave to cool.
  • We begin to collect our salad. We need a large, flat salad bowl.
  • We rub on a coarse grater and distribute the boiled potatoes in an even layer, salt and pepper it a little. We coat with a layer of mayonnaise.
  • Cut the pork into strips and put it on top of the potatoes. Spice up. Salting is not necessary if salted during cooking. We coat with a layer of mayonnaise.
  • On top of the pork, rub pickled cucumbers on a coarse grater. If there is a lot of brine, then you can first drain it on a sieve.
  • We spread the fried onions.
  • Put a layer of mushrooms on the onion.
  • Chop the parsley and decorate the salad.
  • Let the salad sit in the refrigerator for at least 1 hour.

This salad is prepared in western Ukraine. Lemberg is the German name for the city of Lviv. So it was called from 1772 to 1918, in the Austro-Hungarian period.
This salad contains a set of ingredients that make the dish special - delicious and very satisfying. With this recipe, you can not cook hot meat dishes on the festive table, it is so satisfying and self-sufficient.
Small additions:
The pickled cucumber in the recipe can be replaced with a fresh one, or you can mix salted with fresh.
It is better to use homemade mayonnaise to coat the layers. But if someone, for some reason, does not like or eat mayonnaise, they can replace it with any sauce, sour cream, olive oil with balsamic vinegar. Perhaps the recipe will only benefit from such a substitution.
Mushrooms ... well, I used mushrooms mushrooms, and even frozen. We have no other mushrooms, we still have oyster mushrooms. But since this salad comes from western Ukraine, there is a variety of mushrooms there. And I think good forest mushrooms will be a worthy substitute

I made this salad for my husband's DR. My husband ordered it! But since there were several more salads and appetizers, I decided to lighten this salad a little, because it turns out to be very satisfying.
Instead of pork, I took a chicken fillet cooked with spices "steamed." This time I bought steppe porcini mushrooms instead of champignons.
And much less this time it was layered with mayonnaise. The salad did not suffer from this, it was still juicy.
And I liked the replacement of pork with chicken! Probably I will do so in the future.
