Ingredients

Zucchini 800 g
Medium onions 1 piece
Indian spice mix (garam masala, curry) 2 tsp
Olive oil for frying 1 tbsp. the spoon
Salt 1-2 tsp (to taste)

Cooking method

  • The "algorithm" for preparing such zucchini arose by chance.
  • After visiting an "Indian" restaurant in St. Petersburg, where I tasted Dal Tadka lentil soup, I began scouring the Internet for information on how to prepare it, which includes frying onion / garlic in oil, adding a mixture of spices and only then lentils ...
  • So, instead of lentils, it is proposed to use zucchini spaghetti (zucchini), since zucchini in the form of spaghetti, after stewing, retain their shape without boiling in mashed potatoes (unlike cut into pieces).
  • 1. Cut the zucchini on a spiralizer (blade 5 mm), the output turned out to be 800 grams this time (and there were 4 pieces) (after which they can, but not necessarily, be folded into a colander in order to drain the resulting liquid (today it did not fold - did not drain)).
  • 2. Cut the onion into slices as for regular frying.
  • 3. Pour the oil into a preheated saucepan with a thick bottom and after the oil warms up, put the chopped onions there (while the onions are fried, you can cut the leftover zucchini cones into pieces).
  • After 2 minutes, add 1 teaspoon of a mixture of Indian spices to the onion, this time I put Kitchen King Curry universal Pavari seasoning (a mixture of chopped turmeric, coriander, cumin, chili, cardamom, fenugreek, cloves), and before that there was Sambar masala ("108 spices"). And by the way, even Gordon Ramsay indicates ready-made spice mixtures in his recipes.
  • 4. Fry the onions and spices together for 2 - 3 minutes, then add the chopped zucchini, stir to dissolve the fried onions with spices in the zucchini.
  • Close the lid and leave to simmer for 5 minutes.
  • 5. As soon as the zucchini is cooked, add more seasoning 1 teaspoon, salt to taste, and you can also add turmeric, chili pepper (if you like it sharper), stir, close the lid and turn off. Done!
  • And sometimes I also add a little lemon juice (or citric acid) ...

Note

Eat it better with a fork and spoon (like regular spaghetti).
By the way, zucchini cooked in this way may seem edible even to men (it's about the sauce or "Tadka" fried (almost)).
