Ingredients

The original recipe was:
Wheat flour 400 g
Oat flour 50 g
zest and juice of 2x oranges
dilute the juice with water,
so that it reaches the 175 ml mark
Salt 1/2 tsp
Brown sugar 50 g
Butter 50 g
Dry yeast 1 tsp
Maca (pre-fried) 4 tbsp. l.
Egg 2 pcs.

Cooking method

  • In my case, everything turned out like this:
  • 4 tablespoons poppy seeds (pre-fried)
  • zest - I didn't put it down, I was too lazy, but in vain!
  • and the juice of 2 oranges - dilute the juice with water so that it reaches 175 ml - I immediately took more liquid (especially since I did not lay eggs), added more during the kneading process, so that in total it turned out, probably, about 200 ml, or even more
  • 1 tsp yeast
  • 400 g wheat flour
  • 50 g oat flour - replaced with buckwheat for lack of oatmeal. I think if all the flour was taken from wheat, the result would not have changed.
  • 1/2 tsp salt
  • 50 g brown sugar - seemed a bit too much, put 4 tbsp. l
  • 50 g butter - replaced 4 tbsp. l sesame
  • 2 eggs - didn't put it at all
  • plus put in a third of a teaspoon of turmeric (for color, instead of a zest), 1 tablespoon of cardamom and 1 teaspoon of panifarin to the pile.

Taken from the cookie, with my modifications.
The result was a soft, sweet, fragrant bun, in which only one drawback was revealed: it was eaten very quickly, and by the evening there was only one crump.

I made two conclusions for myself: you have to put the zest! The orange is felt, but just a little, it would be better with the zest. And the crust should be light, the bread is fried very well, it could be smaller.

The bread is wonderful! Baked according to the recipe, only without oat flour (replaced with an equal amount of wheat flour). I did not dilute the juice with water, because from two oranges I got exactly 175 ml .. Everything else is according to the recipe. The smell was, I'll tell you ... As in an orange grove, in which poppy seeds ripened ... IriKa, thank you very much for bringing such a wonderful recipe to the forum. I recommend it to everyone who has not tried it yet!

As a result, I had to add 60 ml of water and add another 1 tsp. Panifarina (I didn't put it right away, because I baked it only on wheat flour) ... Right now it’s getting on Pizza ... but it’s only ten minutes ... What should I do next? what is the best ??? ... Do not turn off the Pizza and leave it on the Heating for two hours, and then turn on the Baking, or is there any other way to save the bread?

Juice with zest, for lack of time and love for simplifications, made it simply - an orange with a peel zababahala in a juicer turned out a ready zest and juice, bitter, however, but it will go into bread. The bread got out of the bucket and tried to get out of the bread machine - I had to press the lid down with a basket. The pulp is very airy, light, you can feel a pleasant orange aftertaste. Next time I'll put a little less zest, from one orange. Yes, I also added turmeric for color.

I baked this bread. True, I replaced 1/3 of the flour with bran (to at least create the illusion of dieteticity).
What I want to note is that I had to add water significantly. And then, the bread turned out to be dense.
But the taste is excellent, and very unusual in structure (like a cake). Smells awesome, of course.

If you want sweeter, add another 1-2 tbsp. l.sugar, we adjust the taste ourselves. Orange or tangerine juice will not be felt very much, it is better to add a little yellow zest.

Then I saw that the carrot, which was beginning to spoil, was lying and bored. I cut off more and also in a blender. Yeast 8g mixed 20g of kefir, one egg. I fried sesame seeds in the microwave, since the poppy seeds are soaked in the freezer. 420g of wheat flour from the famous fashion designer is all that was available, but it was not enough. I poured semolina, a little buckwheat flour, a little cornmeal and oat flakes. In general, the kolobok did not work for a very long time. Sugar poured 6 tbsp. l. I don’t even know what will come out of such a mix - it’s still baked ...

It turned out not at all what I expected. This is what happens in the absence of a supply of flour, when in panic you add what you have ... The bread turned out to be yellow, which is not surprising. Has risen normally. From what was mixed (that's the right word!), You can feel the corn and sesame seeds on the wheat dough. A crust with a bitter taste (it can be seen from sesame seeds, probably it shouldn't have been fried in the microwave at all; besides, it was fried there somehow unevenly and something burnt), and the bread itself is sweet. Moreover, it came out quite dry, so I began to hiccup from one piece. There is no semolina, oatmeal, buckwheat and tangerines. A magical bouquet from what was, did not fall in love. Corn was added the most, but in vain - it makes the baked goods dry and crumbly. You shouldn't have used corn at all. And the most correct thing is not to start baking on what threatens to end.
Tangerine peel, it seemed to me, looks unconvincing. Orange is definitely better.
