Marinated garlic with juice and red currant berries

Ingredients

Garlic 12-15 heads
Red Ribes 500-600 gr
Apple cider vinegar 250 ml
Salt 40 g
Sugar 60-70 gr
Black peppercorns 10 pieces

Cooking method

  • Divide the garlic into teeth, leaving the top skin.
  • And fall asleep in jars, alternating with sprigs of red currants.
  • Put 400-500 grams of berries in a saucepan and add 1 liter of water to the mark. Pour in half the salt, sugar and all the peppercorns. We boil for five minutes, mash the berries with a potato grinder and boil for another two minutes. Strain through cheesecloth, add a glass of apple cider vinegar and the remaining salt / sugar. Bring to a boil. And fill the prepared jars with marinade. Sterilize for 10-12 minutes. I am using a multicooker with the Moolinex cook4me pressure cooker function. Time 4 min with forced pressure release. At the bottom is a round silicone mat. This is a hot method, you can try it in a month, but if you have a cellar or space in the refrigerator, you can pour the cloves with cooled brine and under a regular plastic lid. The garlic will be ready in three months.
