Sausages without nitrite salt and casings (my option)

Ingredients

Chicken fillet (peeled) 500 gr.
Milk is cold) 300 gr.
Fresh frozen pork lard 200 gr.
(can be replaced with chicken skin from a whole breast)
Processed cheese (not to be confused with processed product) 1/2 pc. 35 gr.
Coarse sea salt (I don't salt at all) 1 tsp
Spices to taste
I take nutmeg, allspice, sweet paprika)
Corn starch (I have Garnets) can be done without 1 tbsp. l. b / g

Cooking method

  • Recipe redone based on Helen's recipe Elven "Homemade chicken sausages"... And originally from the Gingerbread recipe "Home sausage"... Thank them very much.
  • I cook constantly. I filled the bumps, and now my hand. I love homemade sausages, but mine like it when they are tender, juicy. Therefore, I chose the best option for myself and share it with you.
  • Cut the chicken fillet into small pieces and pour over cold milk overnight. Keep in the refrigerator. The meat absorbs liquid well. Even if the milk sours a little, it doesn't matter and you shouldn't shout "It's all gone!" It's like cutlets with cottage cheese.
  • Now we pass through a meat grinder with a fine lattice at first cold bacon, also chopped not coarsely. Then cheese and fillet. We save the liquid not absorbed into the chicken, but keep it in the refrigerator.
  • I want to emphasize in advance! It is a meat grinder, not a blender or a weak attachment to the combine. And yet, do not return everything that the meat grinder leaves in the "throat" (veins, skins, etc.) into the minced meat. Easier to throw in broth.
  • The resulting minced meat is passed through a meat grinder again. Then add all the other ingredients there: the remaining liquid, spices, starch.
  • Only now the minced meat goes into the blender. Beat well with a blender until smooth. Add water if necessary. We cool it down. The gruel is viscous, but not very thick.
  • Now we shape the sausages in cling film, or a cut-off baking bag, or foil in the form of "candy". Periodically moisten the film, spatula and hands with water.
  • Freeze the finished sausages.

  • I cook them only for a couple, so that less goes into the water. In the evening I transfer sausages from the freezer to the refrigerator. In the morning I boil in the cartoon "Steam" for 20 minutes. !!! I have a pressure cooker !!!!
  • If you need it urgently, I put it right out of the freezer, but for 40 minutes. Considering that they still ripen while the pressure drops!
