Christmas wreath cake

Ingredients

Chocolate cake
Black chocolate 135 gr.
Butter 150 gr.
Sugar 160 g
Rum (cognac, liqueur) 30 ml.
Chicken eggs 5 pieces.
Flour 200 gr.
Vanilla sugar 10 gr.
Baking powder 1.5 tsp.
Milk 100 ml.
Impregnation:
Lemon syrup 2 tbsp. l.
Limoncello 2 tbsp. l.
Salted caramel:
Cream 33% 100 g
Sugar 80 gr.
Honey 1 tbsp. l.
Butter 30 gr.
Salt (preferably large) 1/2 coffee spoon
Cream:
Salted caramel
Cream 33% 350 gr.
Cream cheese 250 gr.
Mandarin Kurd:
Tangerine juice (and zest from 3 tangerines) 180 g
Sugar 120 g (can be adjusted to taste)
Chicken eggs 3 pcs. (or six yolks)
Vanilla sugar 10 gr.
Pectin (corn starch) 2 tsp without top
Butter 30-40 gr.

Cooking method

  • Dear ones! I hasten to share, in my opinion, a very festive recipe for a truly Christmas cake: spicy chocolate cakes, a mysterious caramel note and the aroma of cinnamon and tangerine - this is how I read this bright holiday and this is how it smelled in my house on Christmas Eve :) Do you want? Let's get started ...
  • I propose to break the process of making a cake for two days. The first one is dedicated to baking cakes, we cook caramel and Kurd, and in the second one we collect and decorate the cake.
  • Cakes:
  • We turn on the oven and heat up to 180 degrees.
  • We cover the bottom of two forms with a diameter of 21 cm with parchment paper (if there are no two, take one, but increase the baking time).
  • We heat 100 ml almost to a boil. milk, turn it off, place the chocolate broken into pieces in the milk, leave for 3 minutes, and then mix very well until a smooth shiny mass. Cool to room temperature.
  • We divide the eggs into whites and yolks.
  • Whisk the whites with 80 gr. sugar until it falls out of the bowl.
  • In another bowl (mine is in a mixer), beat the butter at room temperature with sugar, then add the yolks one at a time, beat well and add the chocolate melted in milk, and then the alcohol (you can skip this step if you wish).
  • Alternatively, if you wish, you can add dry baking perfume to the dough. My dry perfume (3/4 tbsp. L.) Contained dry ones: mint, cinnamon, cardamom, ginger, coriander, nutmeg, cloves.
  • Sift flour with baking powder. And then, alternately, in three steps, we introduce flour and proteins into the dough, mixing them manually. A third of the flour, a third of the proteins - mixed, once again a third - mixed and again - and already mixed completely.
  • Spread the dough into two prepared tins, smooth with wet hands

  • and bake in a preheated oven at 180 degrees for 40-45 minutes. Check readiness with a wooden skewer - it should come out completely dry.

  • While the cakes are baked, cook the caramel.
  • Put sugar and honey in a saucepan, melt until golden or light brown (they say, caramel should never be mixed, but I'm faint of heart - I was so afraid to burn it that I mixed it - everything ended well :)). We heat the cream almost to a boil (you can do this in advance if you have only two hands :)) and pour it very carefully into the caramel - at first everything foams in a saucepan, we get scared, but actively stir and boil after boiling for about 2 minutes.
  • Next, remove from heat, add oil, salt, mix well, cover with foil in contact, cool and put in the refrigerator.
  • Next, we proceed to the tangerine Kurd. Here, girls, you will have to be patient, because squeezing juice from tangerines is not the most pleasant experience, at least for me - then I had to unscheduled cleaning the kitchen and take water procedures: it seemed to me that in my tiny apartment there was simply no there is still a place where tangerine juice would not have got, including my eyes, ears and the like of a hair style :))) But ... we're not looking for easy ways, are we? This means that we remove the zest from three tangerines, squeeze the juice out of six and get 180-200 grams.
  • Put juice, zest, eggs (or yolks), sugar mixed with pectin and vanilla sugar in a saucepan and put on low heat. Girls, pectin can be replaced with cornstarch, or you can not put either one or the other at all. I also added anise stars for the scent. Stir constantly, cook until thickened - it took me about six minutes.

  • We remove from heat, filter through a sieve (at the family council it was decided to remove the zest),

  • add oil, mix well, cover with foil in contact, cool and put in the refrigerator.
  • The next day we prepare the cream.
  • In one bowl, at a low mixer speed, mix cream cheese (this time I had a classic President - a yellow box) and caramel, which I took out of the refrigerator an hour before making the cream.

  • In another, chilled bowl, whip the cream (I didn't add sugar, I added only vanilla).
  • Then gradually add cream into the cream cheese with caramel and mix by folding (from bottom to top, not in a circle)

  • That's it - the cream is ready, if desired, it can also be flavored with alcohol.

  • Well, and then we just assemble the cake the way you are used to :) I'm used to wearing a confectionery ring with acetate film. Each cake, if necessary, trim, cut lengthwise into two parts. Next - the cake, soak it, apply the cream, make a side around the perimeter and in the middle - put the Kurd. Like this

  • Then we put the next cake and repeat everything. We send the collected cake to the refrigerator. To my surprise, it turned out to be tall - the film is 10 cm high.

  • The amount of cream indicated in the recipe was enough for me only for a layer of cake. All the leftovers fit into a glass of delicious dessert

  • I used a protein custard for the decoration. If you want to decorate the cake with the same cream that is inside, feel free to make one and a half servings indicated in the recipe.

So bake this cake, girls, talking about it to eliminate all domestic contradictions and misunderstandings; bake, thinking about how strong your feelings are for people close to you, how sincerely you want them to always and everything would be good; bake - and your loved ones and your loved ones will accept your declaration of love without words and will certainly reciprocate to you.But it seems to me, girls, that you never need to quarrel with loved ones - that's why they are close. You will, of course, tell me that this does not happen, that it is impossible? And I may agree with you, but only partially ... Why? Yes, because I know the great secret of my parents, who lived in love, harmony and respect for forty years, until, unfortunately, our mother became ... But she left her secret to me, only I did not understand it right away ... You know , girls, quarrel, quarrel - strife and quarrel can also be different ... My parents, of course, also had disagreements and, of course, were also periodically unhappy with each other. It happened that the relationship was sorted out ... But during their quarrels, they never categorically became personal and did not seek to offend each other. Well, the goal was not to inflict pain, but to inform about the reasons for dissatisfaction and try to agree on ways and means of eliminating it - something like this ...And dad also had his own secret - as soon as mom flared up and showed only a rudimentary intention to start a get-together, dad urgently organized extremely important and urgent matters: take a walk with the children, with the dog, go for bread, milk, a newspaper, a carrot, for ice cream, to visit an old woman-neighbor, etc., etc. - here his imagination was inexhaustible and he almost never repeated himself, can you imagine, girls? And when he returned - the reason for the conflict, as a rule, was exhausted, and my mother had time to ... get bored That's the whole secret, it is very simple - Respect, boundless Respect for the person who is next to you every day and is ready to share everything - and pain, and happiness, and loss, and good luck :))) To a person who knows you like no one else and is always ready to forgive you everything :) Let's live in love and respect, girls, let's bake this (well, or, completely not this, but even any other cake) for Christmas (well, or even just like that) and we will be very, very happy :)))
