Coconut Lace Pie

Ingredients

Flour 600 g
Dry yeast for baking 7 g
Sugar 80 g
Egg 3 pcs
Butter 80 g
Salt 10 g
Powdered milk 20 g
Water 180 g
Filling
Coconut flakes 100 g
Butter 50 g
Sugar 100-120 gr
Small egg or 1/2 egg

Cooking method

  • Mix all dry ingredients and add water and eggs. We start kneading and after 3 minutes gradually add butter. The dough will be slightly thin. We stop the kneader and after 10-15 minutes we turn it on again for 15 minutes, the speed is medium high. As a result, the dough should be wrapped around the hook. We leave for an hour, stretch and put in the refrigerator overnight. In the morning we take it out and let it warm up for two hours. The dough looks like this

  • And we make the filling - we just mix the butter, sugar and egg with a fork and pour in the shavings.

  • We take the first ball and roll it out with a rolling pin to the diameter of our shape. Transfer to a greased form and spread half of the filling

  • Roll out the second ball and cover the first layer with the filling. The edges must be blind.

  • We spread all the filling and cover with the third layer.
  • Now we need to cut the middle of the pie into 8 segments, not reaching the edge by 2 cm
  • Raise each triangle in turn from the middle and twist 3-4 times

  • We give an hour of proofing, grease with a mixture of yolk and milk and send to the oven.

Did an experiment with this test. I added 5 grams of dry yeast and 3-4 grams diluted in fresh water. Everything else is prescription.
