Ingredients

Dough
wheat flour / grade 350-380 grams
egg 1 piece
yolk 1 piece
sugar 50 grams
honey 40 grams
butter (spread) 200 grams
soda 1/4 teaspoon
lemon zest 1 tsp
salt pinch

pitted cherry 250 grams
yolk 4 pieces
sugar 150 grams
starch 3 teaspoons with a slide

sugar 180 grams

Cooking method

  • Dough
  • Sift flour, mix with baking soda and lemon zest.
  • Beat gently in a soft spread or butter.
  • Add sugar, honey and salt. Beat until fluffy.
  • Add the yolk then the egg after the yolk is completely absorbed.
  • Gradually add flour and quickly knead the dough.

  • Divide the dough into pieces, roll out through paper without flour or flatten.
  • Fill baskets, chop the bottom and bake at 200 degrees until browned.
  • Remove from molds and allow to cool.

  • Mix the yolks with lemon juice and starch.
  • Pour into the cherry puree and thicken with constant stirring.

  • Remove, add vanilla, beat for a couple of minutes on the table.
  • Cover the creams with polyethylene.
