Ingredients

water 500-700 grams
Bay leaf 1 piece
ground black pepper taste

Cooking method

  • Finely chop the onion.
  • Grate carrots on a coarse grater.
  • Chop the cabbage into strips.
  • Fry flour in butter from the total amount until golden brown.
  • Pour oil into a wide saucepan with a thick bottom.
  • Fry the onions until golden brown with constant stirring. It is important that it does not burn.
  • Add carrots.
  • Pour water, let it boil and simmer for 5-7 minutes.
  • Add cabbage, let it boil, cover and boil for 5-7 minutes.
  • Add flour, stir well, let it boil.
  • Season with salt and pepper, add bay leaf.
  • Serve with herbs, lemon, croutons or croutons.

I took the recipe for this soup on the Cook site. ru at Iruni. Thank her very much. For a long time I doubted whether to do it or not. There are a lot of reviews about this soup, both positive and negative. I took a chance and ... did not regret it!
Of course, this is not a classic onion soup, but I took the name and the exact recipe of the author. The only thing is that I added 700 grams of water, not 500. But it all depends on your preferences and the juiciness of the vegetables.
This is a very thick soup that can be either the first or the second course. It can be said to be an iintopf

If you like softer cabbage in the soup, then put it immediately with carrots and cook for 15 minutes. I like it with a little crunch, so I bring my time.
There may or may not be lemon in this soup. I liked the lemon more, the juice from which I squeezed out with a spoon right in the plate.
Hearty, but not heavy. Good for both lunch and dinner. Recommend!

Made some changes to the recipe:

1. Took 3 white onions and 2 leeks
2. The green part of the leek was cooked with one stalk of celery in broth to the same soup
3. I took cabbage 50 to 50 white cabbage and Savoy cabbage

I thought that I would like it and it would be delicious, but I didn’t expect it to be SO tasty! And a lemon at the end in a platter is a must, you are right!
