Hot smoked sausages

Ingredients

pork semi-fat 1 kg
Nitrite salt 18 g
Sugar 3 g
Black pepper, coarsely ground 2 g
Garlic (half a small head) 30 g
Pork casings

Cooking method

  • I pass the pork through a meat grinder (8 mm). We get minced meat -
  • Hot smoked sausages
  • Add the ingredients (you can chop the garlic, or you can press it). Mix the minced meat thoroughly.
  • I let the minced meat stand for a couple of hours.

  • In the morning I put it on the grates of the smokehouse.

  • I smoke at 50C for about an hour, then an hour and a half at 70-80C

  • P. s. Nearby is a thicker bar, made from the remaining minced ham. It turned out delicious too.

Smokehouse biovin, I have one, but I don't know the syringe, but I want one.
I have a horizontal sausage syringe filler, not so roomy and without fasteners (with a suction cup).

Syringe of the same company. 3 kg. Convenient enough. It's the same vertical, but without fastening (with a stove) - it constantly rolls on the table, it's not convenient.
