Potato sausage (Salame di patata)

Ingredients

Pork 500 g
Boiled potatoes 500 g
Garlic 1 tooth
Nutmeg 1/2 tsp
Cinnamon (not used) 1/2 tsp
Carnation 3 pcs
Black peppercorns 1 tsp
Salt taste
For garnish:
Lobi green frozen 500 g
Bulb onions 1 PC
Garlic 1 tooth.
Tomatoes in their own juice 100 g

Cooking method

  • Prepare minced meat. To do this, skip the meat twice through a meat grinder. I used Meat grinder CASO FW 2000.
  • First through the middle lattice:

  • Chop cloves and peppercorns in a grinder, sift. Mix in cinnamon (not used) and nutmeg.
  • Add garlic, salt, pepper mixture passed through a press to the minced meat, mix well and leave in the refrigerator for pickling. Already at this stage I was ready to eat minced meat, it smelled so appetizing.) The minced meat lay in the refrigerator for about 2 hours.
  • Peel the potatoes, boil them, pass them through a potato press (I pressed them with a crush, so there were pieces here and there), mix with minced pork, salt again if necessary to taste.
  • Fill prepared casings with minced meat, forming sausages of the desired size.
  • Potato sausage (Salame di patata)
  • Fry sausages in a pan or bake in the oven.
  • If there are no casings, then you can use baking paper, which should be greased with butter, lay out the "sausage" and wrap. Bake in the oven at 200C for about 30 minutes.
  • For a garnish, fry the chopped onion until soft in oil along with the garlic passed through a press.
  • Add tomatoes (diluted tomato paste), or any other preservation. Stew for 3 minutes.
  • Add frozen beans and sauté, stirring occasionally for about 15 minutes. Do not salt.
  • Season the ready-made beans with salt to taste.

This sausage is made from potatoes and pork, prepared in Piedmont. Once the peasants, who had enough potatoes and little pork, invented a sausage in which half of the meat, which was second-rate, was replaced with boiled potatoes, well seasoned with minced meat. They stuffed clean pork intestines with minced meat and tied them like real 100-gram sausages. Grilled or simply spread over a piece of bread, these sausages went alla grande for a week after they were made, that is, great! This sausage was prepared from September to March, until the potatoes began to sprout.

During the Second World War, potato sausage gained real national recognition. Today Salampatata del Canavese is one of the gastronomic symbols of Piedmont. This product contains 30% potatoes, 30% pork, 30% fat. Cloves, nutmeg, cinnamon and black pepper are necessarily used as spices. Some sausage manufacturers use blood to color the minced meat in a brighter color.

The quality of the product is definitely guaranteed so that it can be safely consumed raw. In addition to spreading sausage meat on crostini, Piedmontese fry sausages or use them to make scrambled eggs.
