The right lentil salad

Ingredients

Green lentils 100 ml
Large tomatoes 2 pcs
Serbian cheese 125 g
Red onion (small) 1 PC
Olive oil 3 tbsp. l.
Parsley 1 \ 2 bundles
Salt, freshly ground pepper taste

Cooking method

  • Rinse the lentils, add water and leave for 12 hours. Then drain the water and leave the lentils to germinate for 12-18 hours. The most useful seedlings are no more than 2-3 mm. Wash sprouted lentils. I germinate in a germinator.
  • Cut the tomatoes into cubes.
  • Peel the onion, cut into half rings thinly.
  • Finely chop the parsley leaves.
  • Mix onions, lentils, tomatoes, parsley. Season, stir again.
  • Cut the cheese into cubes and gently stir into the salad.
  • Serve immediately.
  • I love sprouted lentils. I have it in the first place in terms of taste among the sprouts. I have been sprouting it for a long time, but just recently I learned that the iron in lentils is absorbed only together with vitamin C, which is found in parsley and tomatoes. So this salad is made according to all the rules.
  • The recipe and information about lentils are taken from the book "Fast 5: 2 Diet" by Michael Mosley and Mimi Spencer. There it was suggested to boil lentils. But I prefer to sprout to preserve as many nutrients as possible.
