Ingredients

Dough:
Flour of the highest grade 2 Kg
Milk 3.2% 4 cups
Compressed yeast 42 g
Granulated sugar 3 cups
Salt 1/4 h l
Eggs 7 pcs
Yolks 3 pcs
Vanilla sugar 2 sachets
Butter 300 g
Raisins 200 g
Zest of one orange
Glaze:
Protein 3 pcs
Salt A little bit
Powdered sugar 300 g

Cooking method

  • Unfortunately, I didn't have time to publish the recipe yesterday ... Still, better late than never. I have been using this recipe for many years and have never failed. The cake is very fragrant, not cloying.
  • Dissolve yeast in warm milk, add 1/2 cup flour and 2 tsp. Sahara. The dough turns out to be liquid.
  • When the dough foams and expands, add the rest of the flour, vanilla sugar, salt and sugar. Mix well, add yolks and eggs one by one. Knead well again. Last but not least, add butter (the butter should be very soft, but not liquid) and orange peel. It is very important to knead the dough well. Cover with a damp towel and place in preheated to 30-40 degrees and turned OFF oven. The dough should rise 2 times.
  • Soak and wash the raisins, dry them with a paper towel, sprinkle with flour.
  • We form balls by volume 1/4 of the used form, adding raisins, put in the forms, cover with a towel and let rise.
  • Preheat the oven to 200 degrees, "convection" mode. When the oven warms up, we reduce the temperature to 180 degrees, sprinkle the oven with water from a spray bottle, carefully place a sheet of cakes. Sprinkle with water again and close the oven. Repeat spraying a couple of times with an interval of 5-6 minutes. Bake until tender, checking with a deleted stick.
  • Prepare the icing: beat the whites with a pinch of salt to the peaks, then slowly add the icing sugar, continuing to beat. When the cakes have cooled down, grease with protein glaze, decorate.

Note

At first I kneaded the dough by hand, but after adding all the flour, I divided it into 2 parts and kneaded in turn in a Bosch MUM86 combine.
Raisins mixed into each cake separately. I like it so.
Used a 210 ml American measuring cup. Baked in paper tins of various sizes. It was installed on the sheet so that there was an opportunity for hot air circulation between them. She baked all the cakes in two times.
Weighed sugar: 200 gr in a cup. Despite this amount, the cakes are not sugary. Maybe we have such sugar?
