Salt 3/4 tsp
Sourdough (optional) 1 tbsp. l.
TO LUBRICATE THE Dough:
Goose fat (duck or lard) 50-70 g
FOR TOP:
Sweet paprika powder (optional) 1 tsp
Cream or milk 3 tbsp. l.
Sesame or other seeds optional

Cooking method

  • - Soak red beans (100 g dry) overnight, then rinse and cook according to the instructions without salt. I cooked in STEBA on the "Soup" program for 45 minutes, I needed to get very soft beans at the end. The beans, by the way, weren't boiled. Strain the cooked beans through a colander and grind through a meat grinder or in a chopper. There is no need to achieve a homogeneous structure. By the way, you can rub it through a sieve.
  • - Before you start making mashed beans, make a small dough: mix 20 g of flour with 4-5 tbsp. l. water and 1 tsp. dry yeast. the consistency of pancakes. Let stand for 15-20 minutes.
  • - Mix flour, bean puree, egg and milk. Let stand until the dough starts to play and bubbles appear on the surface.
  • -Add the dough to the dough and knead for 8 minutes, in the process add salt, then sugar in five minutes. At first, the dough will be viscous and smear in appearance, but at the end of the kneading, a loose bun will form, practically not smearing along the bottom. If this does not happen, then add a little flour (1-2 tablespoons). Do not hammer the dough with flour, it should be soft, sticky and blurry on the table.

  • - After kneading, we immediately spread the dough on a surface well (!) Sprinkled with flour, and with our hands sprinkled with flour, we distribute the dough into a layer 2 cm thick.
  • - Lubricate the layer with melted fat and roll it into a roll, pinch the edge and fold the roll three times. Turn the roll over, cover with foil and a towel, leave on the table for 30 minutes.

  • - We repeat the procedure of greasing and folding into a roll, followed by adding three times two more times. That is, there are only three cycles. In principle, the dough is so soft that it is quite possible to distribute it into the layer by hand, which I did three times. So you can not reach the rolling pin at all.
  • - After the third rolling and folding, let the dough stand for 20 minutes, distribute or roll the dough into a layer 2 cm thick. Cut out round donuts with molds and grease them with milk mixed with ground sweet paprika.Let it stand for half an hour and bake at 220C for 4 minutes, then at 180C for 10 minutes until cooked.
