  • The meat grinder did a great job. The dough looks smooth. Leave it to ferment at T = 30-32 * C for 1.5 hours under the film. Divide into the desired number of parts. I have 9 bagels of 90g each. Let them rest under the plastic for 15 minutes. Flatten each part into a cake and twist into a tourniquet. Connect the tourniquet with the ends in a ring and leave to come up in a warm place with steam for 1.5 hours.

Note

For cooking using pressed yeast for dough, you need to take whole grain flour 150g, water 110g, yeast 4g. Prescription dough.
To prepare bagels using fruit liquid yeast for dough, you need:
pre-enzyme from 145g of whole grain flour and 125g of liquid yeast, keep in a warm place for 12-16 hours. For the test:
premium flour 360g, whey 80g, whole pre-enzyme, salt 7g, honey 20g.

Although making them is not easy - the dough is heavy and such a procedure as rubbing is very difficult. So I figured out how to make it easier, then I did it.
