Ingredients

Wheat flour 400 g
Whole grain wheat flour 50 g
Meal flour 50 g
Cane sugar 70 g
Powdered milk 15 g
Butter 40 g
Fermented goji berry infusion 170 ml
Water 150 ml
Dry yeast 1.5 g
Salt 5 g
Goji berries for fermentation 20 g
Dried blueberries and goji berries one handful

Cooking method

  • Blueberries and goji berries included in the list superfoods... The hallmark of a plant-based superfood is its incredible amount of bioflavonoids. Behind this name are several hundred substances (catechins, polyphenols, isoflavones ...) with different properties, but they all have one thing in common: they are all powerful antioxidants that help our body fight oxidative stress that provokes premature aging and cell mutation. It is believed that the richer the color of the fruit, the more bioflavonoids it contains.
  • Goji berries, guarana, acai or acerola - many "superfoods" do not grow in our latitudes. But if you want to consume superfoods every day, then our land gave us such superfoods as blueberries and cranberries, which are in no way inferior in antioxidant content to overseas berries. I decided to put goji berries, fermented for three days, and our own dried blueberries in these rolls.
  • The use of liquid from fermentation of goji berries has significantly reduced the amount of yeast.
  • The presence of whole grain and spelled flour has enriched the composition of the buns, imparted a nutty flavor to the dough, and increased the nutritional value.
  • - Three days before baking, pour 20 g of goji berries with clean water (200 ml) in glass! sterile jar. We put in a warm place (28C) under a loose lid. Shake the jar twice a day. On the second day, signs of fermentation appear, on the third, the berries are already actively fermenting. You can knead the dough.
  • - We mix all types of flour, yeast, add according to the recipe all the liquid and fermented goji berries, that is, 150 ml of water and 170 ml of infusion along with fermented berries. Stir and leave for 20 minutes.

  • - Knead the dough, gradually adding salt, sugar and finally softened butter. Continue stirring after that for 7 minutes at low speed. We leave the dough to come up and do one kneading, adding dried blueberries and goji berries.
  • - After the dough comes up a second time, put it on a table covered with flour, fold it, let it stand for 10 minutes and shape the buns.
  • I deliberately made buns of different shapes in order to understand which shape would best suit this recipe. I advise you to simply make a few medium-sized round buns, or better, elongated bars. All the charm of these delicious buns is in their aromatic, slightly moist crumb. A bit like the crumb of a dry cake.

  • - Let the buns fit well and bake with steam for 5 minutes at 230C, then at 180C until tender. I advise you not to grease the top, as I did. The dough is already beautiful in color due to the fermented berries, which dissolve in it during the kneading process.

Note

Goji can be replaced with another berry.
If suddenly on the third day the berries did not start to play, and an unpleasant smell appeared, then we throw everything away and start over.
