Ingredients

Potatoes for cooking 800 g
Meat broth (I have vegetable) 1 liter

Cooking method

  • The recipe is taken from the amazing book "Germany. Gastronomy." Highly recommend for those interested in unadapted traditional German cuisine. There are a lot of recipes that I have exhibited from this book.
  • This soup belongs to the cuisine of Rugen Island. Rügen is the largest island in Germany with various forms in its landscape - coastlines, wastelands, forests, salt meadows, fields, cliffs and even a chain of hills called the Alps.
  • The island's population has led an autonomous existence for many centuries. They were not rich, but the fertile soil, sea and bodden provided the fishermen and small peasants with everything they needed for a modest life.
  • “Our poultry yard supplied us with geese, turkeys, ducks, chickens and pigeons, and our grandfather’s good gun - hares, partridges, wild ducks and the most excellent snipe, of which there were a great many on the coast and its vast meadows,” the writer Ernst wrote in his memoirs Moritz Arnda, originally from Groß Schoritz on the island of Rügen.
  • The cuisine of the island of Rügen is strongly influenced by Pomerania and Mecklenburg, as well as the Scandinavian countries.
  • Naturally, fish plays an important role in the island cuisine, as the Rügen coastline is 273 km long.
  • Boddens are especially rich in fish, which are irregular bays surrounded by land on almost all sides. Since they have only one narrow outlet to the sea, even freshwater fish live in them, because the salt content of the bodden water is very low. It is believed that fish from the Bodden are more tender and tastier than their marine relatives.
  • Delicacies of the island cuisine include cod in mustard sauce, eel soup and braised eel.
  • Dishes are traditionally washed down with schnapps, a high-grade mixture of wheat moonshine, sea buckthorn and herbs, which is set on fire before serving.
  • In general, the cuisine is simple and many dishes are easy to prepare. What I was convinced of by making a simple smoked eel soup.
  • It is really not difficult. In fact, this is a mashed potato soup with vegetables and smoked eel. Delicate, completely not spicy, one can even say with confidence, a dietary soup.

  • Peel potatoes, cut into slices and cook in broth with onions, bay leaves and pepper. (I chopped the onion and nevertheless slightly sautéed Russell Hobbs in a soup cooker. I boiled it there too.)

  • - We take out the bay leaf and make a puree soup with a blender or soup cooker knives.
  • - When the soup boils again, add celery and carrots, cut into thin strips, and let it boil for a minute or two. Then add the herbs, season to taste with salt and pepper and add the smoked eel cut into pieces.
  • - Let it simmer for a couple of minutes over low heat and serve, sprinkled with herbs, preferably chives.
