Wheat bread with chickpea broth with bran (Rekitsen)

Ingredients

Wheat flour 320 g
Bran (I have Rekitsen) 20 g
Dry yeast 1 tsp
Powdered milk 10 g
Semolina 20 g
Honey 1 tsp
Salt in the dough 7 g
Butter 1 tbsp. l.
Water 120 ml
Unsalted chickpea broth 120 ml

Cooking method

  • Wheat bread with chickpea broth with bran (Rekitsen)
  • - Pour the flour, bran, milk powder, semolina and yeast with warm chickpea broth mixed with water, stir and let stand for 20 minutes.
  • Then start kneading the dough, adding the ingredients in the following sequence: salt, honey, softened butter.
  • - Knead the dough for 7 minutes, first at medium speed, then at the lowest speed. Leave it for 1 hour. My dough was just equal and in 30 minutes it was ready for the second kneading.
  • -Make a knead- knead the dough for a minute at low speed.
  • - As the dough comes up a second time, fold it, let stand for 15 minutes, shape into a loaf or place in a greased pan. Let stand and bake at 230 g for 5 minutes, then lower the temperature to 180 and bake until tender.
  • Fine bread, the crumb is porous, not heavy, does not crumble, the crust is thin and crispy, and remains so the next day. I will bake all the time! Very good with butter, both butter and olive, borscht and sandwiches. Closer to the peasant, but nobler.

If you want a less dense crumb, then reduce the flour to 300 g.

Found a recipe in the topic about Chickpea. Of course, it immediately became a pity to pour out the broth, therefore:

Common wheat bran, semolina, 200 gr. sourdough, so a little less yeast. Already when I kneaded, I realized that the bread would be small, and since I don’t want to bake again tomorrow, and exactly 240 ml of the broth remained, I quickly threw in just the same amount again. It turned out to be a double serving, just for 2 bars.
