  • I did not find a recipe for candied apple on our website. I have been doing it for a long time, so I post this recipe without hesitation on our forum. This recipe is very good for those who have a garden or cottage. The jam has already been cooked, the juice has been pressed, the apples have been dried on an uzvar, and the apples are still there. Then you can make candied fruits, "utilizing" in this way a huge number of "padans".
  • Apples are best taken in autumn varieties. Peel and core. Cut small apples into quarters. Medium - for one eighth. That is, do not grind the apples. We cut a bucket of apples in this way. I specify: peeled and chopped apples - a bucket (10-11 liters). We fill these apples with sugar and wait for the apples to start juice. When the apples cry, bring them to a boil. We leave them to infuse in syrup for 1 day. After that, we put it in a colander. And we send it to the dryer or oven. We dry until fully cooked, that is, for a long time (mine have been drying for 15 hours already). I keep candied fruits in a linen bag. Of course they stick together, and over time they become damp, then I dry them one more time. But, to be honest, my candied apples are not stale. "Fly away" very quickly, instead of sweets.

Klara-1, it's nice that you liked the recipe. I dry in a dryer at 50 degrees. Therefore, this process takes a long time. I will dry the next portion at 70. I did not measure the temperature in the oven (because I did not dry it). I assume that the door is ajar 120 degrees. Try it at random. The main thing is to dry, not burn. Well, don't go far from the oven, just for every fireman.

Well, the first batch arrived in time. The output volume can be seen in the photo. I dried these candied fruits to the state of "pebbles", because I plan to hide them until winter. But they are most delicious when soft.

Secondly, I have a conveyor belt, some apples are still drying, and some are just adding. Thirdly, I do not know where you are going to dry apples: in the oven or dryer, what is the power of these devices, etc. Taste the apples by touch. When they're ready, you won't feel sticky. The degree of softness is at your discretion. Our area is quite humid. Therefore, I prefer to dry it out - over time, my candied fruits will damp and become soft.
I want to add my own work. For the first portion, I poured 1 kg of sugar into a bucket of apples. For subsequent servings, the amount of sugar was reduced to two glasses.When the apples were letting in the juice, I topped up the juice from the previous batches (I kept the boiled one in the refrigerator). Thus, I saved sugar. According to my observations, this did not affect the product.

The second batch has already been cleaned, cut and covered with sugar.

Tanya! I have a Russian Wonder Woman (or Wonder Woman). I'm happy with the dryer. It has 5 trays, but it is quite capacious - the diameter of the tray is about 40 cm, and the height of the tray is about 5 cm. Here is a bucket of apples on it.
I think that apples can stand for a longer time in syrup, wait for shrinkage and compaction of the previous batch.
