Almond rolls

Ingredients

dry yeast (fast-acting) 1 tsp
wheat flour c. from. 300 g
almond 60 g
milk 240 g
granulated sugar 50 g
salt 1 tsp
butter 45 g

Cooking method

  • Grind almonds (with skin) in a coffee grinder. I ground in two passes, 30 grams of almonds, adding each time 10 grams of granulated sugar (of the total).
  • Add 200 grams of milk. While stirring, bring the mixture to a boil. Cover and cool to room temperature.
  • Mix yeast with 250 grams of flour, add salt, sugar, milk and almond-milk mass. Knead the dough for 5-6 minutes. Let it stand for autolysis for 15 minutes.
  • Add pieces of softened butter, the remaining flour, knead a soft, slightly sticky dough. Fermentation for 120 minutes with two kneading steps every 45 minutes.
  • Dust the table with flour, lay out the dough, knead, divide into 6-8 equal parts. Form into round rolls, place on a baking sheet or baking sheet lined with baking paper. Proofing under the foil for 40-50 minutes until the volume doubles. Grease the top of the rolls with milk before placing in the oven.
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 7-8 minutes, then drop the temperature to 200C (convection 180C) degrees and bring the rolls to readiness. The total baking time (in the form) for me was 40 minutes.
  • Cool the finished rolls on a wire rack.

Marus, only smell like almonds during baking. There are not many almonds here, and it does not have a bright taste. Here, it rather gives the texture and color of the crumb.
The rolls were molded round. After baking, they took up the entire living space in a mold with a diameter of 26 cm.
