Ingredients

Fresh yeast 15 g
Milk 400 ml
Sugar 1.5 tbsp
Salt 1.5 tsp.
Wheat flour 600 g
Butter 90 g
Eggs 3 pcs
Almond 150 g
Candied fruit 200 g
White rum 50 ml
Lemon zest 1 lemon

Cooking method

  • To be honest, I've always been afraid of the test. Therefore, as soon as I bought myself a bread maker, I started baking at home. I started with bread and baguettes (in my Mirta BM2088 bread machine there is one for the baguette mold). But the peak of skill for me is Easter cake! Now I can do that too :)
  • PREPARATION
  • 1. Preparation of the dough
  • Heat milk to 40 degrees. Dilute yeast in milk (stir a little at first to dissolve all yeast), then pour in all milk. Add sugar and salt to the mixture. Pour in flour, stirring gradually so that no lumps form. Place the dough in a warm place for 1 hour. The dough should rise and be twice as high.
  • All the same can be done in a bread maker on the "dough" mode, but I really wanted to knead the dough manually at the initial stage (like my grandmother's). So I mixed the ingredients in a saucepan, covered it with a towel, and put it in a cupboard away from drafts.
  • 2. Preparation of tasty additives.
  • Grind the almonds in a blender. Grate lemon zest on a fine grater. Pour the candied fruits with rum (it is advisable to do this at night, I had only 3 hours). As candied fruits, I used dried apricots, raisins, pineapple and mango.
  • 3. Immersion in a bread maker.
  • Take the bowl of the bread maker, place the kneaders in it (my Mirta bread machine has 2 kneaders, ideal for kneading a large amount of dough). Gently place the dough in the bowl of the bread maker, add 3 beaten eggs, crushed almonds, candied fruit and lemon zest. Add melted butter.
  • 4. Program selection.
  • I set my bread maker to sweet and medium crust.
  • I want to warn the hostesses that the dough will turn out not to be standard (light and dry), but rich, rather dense and soft, with fragrant candied fruits. This is the kind of dough I love the most. It tastes like a cross between a filled muffin and an Italian colomba.
