Ingredients

Light raisins 150 g
Dark raisins 150 g
Dried cherries 150 g
Kumquat candied 200 g
Rum or cognac 120 ml
Butter 260 g
Brown sugar (optional, you can also white) 250 g

Wheat flour 310 g

  • 1. I brought a classic combination of dried fruits. You can use it according to your desire and availability. I had pineapples, kiwi, raisins in stock. Soak all dried fruits in rum for a day. Stir occasionally to absorb the rum. Sometimes an hour is enough!

Probably because there is not a lot of flour, and the weight is decent. The instructions for Bork say that the baking cycle is designed for 800 grams.

Writing a report on yesterday's Fruitcake.

I have a Polaris PMC 0523AD cartoon, and so:

1) cooking time - 3 hours at 120.
Although, judging by the color, it could be reduced by 20-25 minutes.
After the first hour - a completely liquid dough, after the second - there was a dark crust along the edge of the pan, and the surface in small bubbles, after the third hour - as in your photo, the top is light brown.
Finished baking late in the morning - about 2 am, pulled out the saucepan and left until morning. This morning I turned over (the cupcake fell out of the saucepan without any problems) the bottom of the cupcake, again as in your photo, is dark brown. Wrapped with foil, put it in the refrigerator.

2) I can't say about the quantitative composition of dried fruits, I just poured them all in a row into a saucepan on a scale until I reached the weight according to the recipe.
By quality composition: kumquat, candied cherries, peaches and pears, light raisins, dark raisins.

It got a little tan, probably because there was no way to pull it out, and it was heated for about 1.5 hours. When I put the dough in the bowl, it was 2100, ready-made 2500.

The rest is prescription. I poured it into a mold without greasing it (it's good that it was Nordic with a pipe and there is enough oil in the dough). Baked in the oven. Children and adults ordered the same for the next family gatherings, only much more. So this cupcake will be in our permanent family recipes.
