Ingredients

Flour 1 grade 500gr
Cucumber pickle 140ml
Mineral water with gas 190ml
Bran or fiber 2.5 st. l.
Flax seeds 2st. l.
Mustard oil 2st. l.
Sugar 1.5 st. l.
Salt 1h l.
Dry yeast 1.5h l.

Cooking method

  • I baked this bread with rye bran and wheat fiber, this time I used fiber with milk thistle. It doesn't matter which bran you take.
  • We put all the products in a bucket, as indicated in the instructions for your HP. I put in the following sequence: brine, min water, oil, salt, sugar, flour, bran, yeast. I throw in flax on a signal during the second batch.
  • Basic mode, medium crust, weight up to 1 kg.
  • The dough rises very well, the crumb is airy, porous. The bread is so soft that it is difficult to cut and crumble. The taste of the brine is subtle, but adds zest.

I tried to bake this bread completely in brine (without mines of water), the dough did not rise well and the crumb turned out to be damp, so I began to dilute the brine with water.

Only here I would like to warn in advance. I had a mineral water not only just open for making bread, but open the week before, for bread before last. But my mother today made bread according to this recipe and opened a fresh mineral water, so her bread rested against the window.I suppose that this is because of the mineral water, although we have different stoves with her (I have a supra, she has a panas), and yeast is different, and flour (it has the highest grade, I have the first).
