  • The amount of ingredients is limited by your appetite.
  • Soak the beans in cold water and then boil until tender, but so that they do not fall apart. It is in this case that the cutlets will keep their shape perfectly when frying or baking. I personally grind the cooled beans with a blender (but you can also use a meat grinder). I do not deliberately bring to a homogeneous puree, I like it more. Cut the onion into small cubes and fry in vegetable oil until golden brown. It tastes better, but you can also put raw onions. Add salt, pepper and other spices as desired. If you are not fasting or vegetarian then add an egg. If, for some reason, the option with an egg is not suitable, then add a little starch. Knead the minced meat thoroughly and form patties with hands dipped in cold water. Dip them in flour or bread crumbs and fry. Since all the ingredients are already ready-made, we do not fry for long, just so that a crust forms.
  • The cutlets are delicious both hot and cold. Husband and son eat, and this is an indicator for me. Without meat it is risky to call my husband to the table.

For the first time I cooked such cutlets in 2012 on the anniversary of my mother-in-law's death, and she fell on Holy Week. Since everyone was warned about the lean table, they were lost for a long time in conjectures of what the cutlets were.
I must say that then I was tormented with them: they fell apart, absorbed a lot of oil, I did not like the taste. Now this is the only way I do them. Fast, easy, satisfying, healthy. After all, the protein of legumes is quite complete.
The cutlets turn out to be somewhat dry, so it is better to serve them with a juicy salad or sauce.
