Large onion 3 pcs.
Carrot 3 pcs.
Potatoes 2 pcs.
Lemon 1 PC.
Sugar 2 tsp
Salt 1 tsp
Unrefined olive oil 100 ml

Cooking method

  • I cook this dish in a mechanical gas pressure cooker.
  • Finely chop the onions, put them in a pressure cooker and fry them in a minimum amount of refined vegetable oil.
  • At this time, we clean the carrots, cut them into cubes and add to the onion.
  • We peel the potatoes, cut them into the same cubes, put them in a roast, cover with a lid and continue to stew the vegetables.
  • Prepare the sauce: dissolve salt, sugar in a glass of hot water and squeeze lemon juice there.
  • We peel the celery and quickly, so that it does not have time to darken, cut it into slices 2-2.5 cm thick.
  • Spread the celery evenly over the remaining vegetables and pour over the lemon sauce.

  • Cover and simmer over low heat until celery is soft. In my pressure cooker it takes about 10 minutes.
  • Pour the finished vegetables with olive oil and leave to cool. Serve cold, sprinkle with chopped parsley.
  • The hardest part of this recipe is finding a good celery without voids, firm and unknotted.
