Ingredients

pork leg (skinned, boneless) 5-7 kg
water 4-5 liters
salt 8-10 st. l.
sugar 3-4 tbsp. l.
black pepper (peas) 2 tsp
Bay leaf 3 pcs.
glaze:
mustard 4-6 st. l.
honey 4-6 st. l.
breadcrumbs 4-6 st. l.

Cooking method

  • The ham is waiting in the wings, tomorrow we will take a sample, but while it was baking - the smells were stunning)))). I did everything strictly according to the recipe, BUT the ham I had was 3 kg 250 g, so I made the brine by 3 liters, accordingly reducing the amount of sugar and salt, I did not use breadcrumbs. Marinated the ham for exactly one day, baked for 3.5 hours at a temperature of 170 grams. and after applying the glaze - 20 minutes at 230 grams, it could have been less, but I wanted a very golden brown).
  • Use a wide knife to crush the black peppercorns. Pour water into a large saucepan, add salt, sugar, bay leaves and black pepper. Bring to a boil, stirring occasionally until sugar and salt are completely dissolved. Remove from heat and cool.
  • Pour the brine into a large deep bowl and place the ham in it. Put in the refrigerator for 24-36 hours, turning the meat several times during the salting process.
  • Remove the ham from the brine and dry thoroughly with a paper towel.
  • Preheat oven to 110-125 ° C. Pour 200 ml of water into a baking sheet with a roasting rack. Place the ham on a wire rack, skin side up (meat should be at room temperature). Insert a roasting thermometer into the thickest part of the meat. Bake the meat at the rate of 70-75 minutes per 1 kg of meat. The ham is done when the meat reaches 73-77 ° C.
  • Remove the ham from the oven and set aside for 5 minutes. Remove skin from meat and cut off subcutaneous fat.
  • Increase oven heating to 200-225 ° C.
  • In a small bowl, mix the mustard and honey until smooth. Brush the ham with the mixture. Sprinkle with breadcrumbs. Place in the oven and continue to bake until golden brown.
  • Remove the ham from the oven, decorate with cloves.
