Roast a la Gilroix

Ingredients

Lean beef (I have moose) 1 kg
Bulb onions 2 pcs
Garlic 2-3 tooth.
Dry red wine 150 - 250 g
Strong black coffee 250 g
Water* 250 g
Bay leaf 1 PC
Salt pepper taste
Vegetable oil for frying
Starch (not used) 1 st. l

Cooking method

  • I must say right away that this is the most delicious meat that I have eaten !!!!!!!
  • Pierce the meat with a sharp knife and stuff with garlic and onions (2-3 pieces for each hole).
  • Mix the rest of the onion and garlic with the wine.
  • Put the meat in a container (I have a vacuum container), pour over with wine, cover and marinate for 24-48 hours. Turn meat from time to time.
  • Strain the wine and save.
  • Dry the meat with a paper towel. Fry on all sides until golden brown. I fried in a grill pan.
  • Put meat in a saucepan, pour wine, coffee, water so that the meat is completely covered with liquid. * You may need more or less water.
  • Put the bay leaf. DO NOT DRAIN !!!!
  • Bring to a boil on HI, then transfer to LOU. The total cooking time is 6 hours.
  • Season with salt and pepper to taste 30 minutes before the end of cooking.
  • Pull out the bay leaf. Dilute starch in a little water, dilute with liquid from a saucepan to a sauce state. I didn't, because we don't eat that sauce.
  • For a multicooker, you can cook on the Stew mode - 3 hours.
  • Roast a la Gilroix
