Eggplant stuffed in the microwave

Ingredients

eggplant 2 pcs.
tomato 1 PC.
hard cheese 70-100 g
egg 1 PC.
milk 1-2 tbsp. l.

Cooking method

  • Wash the eggplants, cut off the tails, cut in half lengthwise. Make notches on the side of the cut, salt, stand for 10 minutes, squeeze lightly.
  • Then bake the blue ones in the microwave. It all depends on the size of the eggplant themselves. I had small ones, so the time is 5 minutes. at full power (I have 750 watts) was enough.
  • Then carefully remove the pulp with a spoon and chop. Add a tomato cut into small cubes, a little grated cheese, garlic, at the same time rubbed the remnants of cheese there (instead of salt). I filled eggplant boats with the resulting mixture. I put it in the microwave for another 2 minutes. In the meantime, beat 1 egg, a couple of tablespoons of milk. Pour the mixture over the eggplant and sprinkle with grated cheese. Put on for another 4-5 minutes until the cheese melts and the omelet is done.

I did it several times, the last one - quite lazy and "slimming" option - baked eggplants + finely chopped herbs and tomatoes, squeezed garlic.I didn't even add an egg with milk and instead of high-calorie hard cheese I put in a less-calorie Adyghe cheese, and for piquancy I poured it with balsamic vinegar in a thin stream. With hard cheese and eggs, it's also incredibly tasty, but more high in calories. And the vacation is ahead! :-)

There were 2 large eggplants. When I cut them, it turned out that they did not fit into the microwave. I have a small micra in my dacha. But I’m already tuned in. I had to shove eggplants into the Princess. And you know, it turned out very cool! Probably longer than it would be in a micro, but very tasty, juicy and elegant. Thanks for the recipe!
