Ingredients

Cooking method

  • This recipe is from my Italian friend's grandmother! They call it the winter option!
  • Calzone di spinaci (closed spinach pizza)
  • Put the ingredients in the bread maker and cook in the "yeast dough" mode.
  • When the dough is ready, divide it into 2 parts, from which we get 2 pizzas.
  • Roll out into a circle about 25-30 cm in a diameter. We spread the filling on one half, retreating from the edges by about 1.5 - 2 cm.Then, grease the edge with water along the diameter, and close. It should turn out to be a cheburek .. well, or something like that ..)
  • FILLING
  • onion - 1 pc.
  • Frozen spinach - 300 gr.
  • One boiled egg - 1 pc.
  • soft cheese - 50 gr
  • Gouda - 80g.
  • garlic - 2 cloves
  • olive oil - 1 tsp
  • salt and ground black pepper to taste
  • Preparation of the filling: First of all, you need to defrost the spinach and boil it into a hard egg. Pour oil into a preheated pan, the onion is not very small there and squeeze the garlic. As soon as the onion becomes a little soft, add well-pressed and chopped spinach. Salt and pepper. After 10 minutes, remove from the stove and set to cool. Now: rub Gouda into a large bowl on a coarse grater, grind an egg there, add soft cheese and cooled spinach. We mix. If the filling is too dry, you can add a little olive oil.
  • To make the pizza beautiful, you can grease it with an egg and sprinkle with sesame seeds. We bake for about 10 minutes in a preheated oven at temp. 180.
  • If it inflates strongly, then you need to carefully pierce the bubbles with a knife))

Ricotta is fine .. Sometimes, if there is no soft cheese .. then add cottage cheese (unsweetened), or just add more Hard cheese.

Made a pizza according to this recipe. Firstly, the dough - it's just super-duper, just like in a pizzeria, that's exactly what I was looking for, but until HP appeared, I could not do this. Well, and secondly, specifically according to this recipe. I made a filling of spinach, but by sight, spinach was about 100 grams somewhere, cheese by eye, instead of soft, I took salted cheese (I love it) and added chopped walnut.There was still a lot of filling, even though the amount of spinach and cheese was greatly reduced, it would still be enough for two pizzas. But from the second part of the dough, I made a traditional open pizza with meat sausages, cheese, capers, onions, bell peppers. She didn't have time to take a picture. Here is a photo of a closed pizza, I just greased it with an egg.

Thanks for the great dough recipe! I didn't do it with spinach - we don't eat that))), but according to this recipe I make pizza all the time. They love our thin dough and a lot of filling !!!
