Rice pudding with dried apricots in a double boiler

Ingredients

Rice 125 BC
Milk 375 ml.
Vanilla sugar 10g.
Egg 2 pcs.
Dried apricots 50 g

Cooking method

  • Put rice in a bowl for cooking rice, pour milk, add vanilla sugar (you can add 1 more tablespoon of sugar, I always reduce the amount). Boil in a double boiler for 40 minutes.
  • Cool, add yolks, dried apricots cut into strips, whites whipped into foam. Place in a bowl greased with butter (steamer rice bowl). Steam for another 30 minutes.
  • Very tasty. But I liked English with Jam better, it was more wet. This one is a bit dry for my taste for pudding. It should probably be served with cream.
