basmati rice 280 g
bouillon 600 ml +
eggplant 700 g
lamb meat (beef) 500-600 g
salt taste
pepper mix taste
cinnamon 1/3 tsp
saffron (I have turmeric) 1/2 tsp
vegetable oil for frying
Bay leaf 1-2 pcs.

Cooking method

Cut the meat into small pieces.
Boil until tender with spices.
Peel and cut the eggplants into strips up to a centimeter thick.
Fry lightly in vegetable oil. Transfer to a napkin to absorb excess fat.
Rinse the rice. Put one tablespoon on the bottom of the saucepan. Flatten.
Place the eggplants on the sides and bottom of the pan so that there are no gaps.
Lay out the meat. Cover with rice and smooth.
Season with pepper and salt.
Pour the broth in which the meat was cooked.
To cover with a lid. Bring the rice over low heat until cooked. The liquid should be absorbed.
Remove from heat. Let stand for 30-40 minutes under the lid. Turn over onto a dish and carefully remove the pan.
