Shortcake with apricot and pudding (+ video)


Shortcrust pastry
premium wheat flour 190 g
cold butter 125 g
baking powder 1 tsp
powdered sugar 15 g
yolk 2 pcs.
salt chips
vanilla pudding or cornstarch 40 g
protein 2 pcs.
sugar 90 g
vanilla sugar 10 g
vegetable oil b / s 50 g

apricot 10 pieces.
powdered sugar for sprinkling

Cooking method

Mix flour with powder, salt and baking powder. Pour into the combine.
Add cold butter, cut into pieces.
Pulses to turn everything into crumbs.
Pour in the yolks.
Switch on the combine. Turn the mass into dough.
Place the dough on the rug. Assemble in a ball and make a "brick".
Cut off a third. Wrap each piece in foil and send to the freezer for 1 hour.
Cover the baking dish with baking paper.
Remove the larger piece of dough from the freezer. Grate on a coarse grater. Flatten and tamp.
Bake in an oven preheated to 190 degrees for 15-20 minutes.
Take out and let cool completely.
Beat the whites with sugar and vanilla sugar until firm.
Add pudding and stir.
While stirring, pour in the oil in a trickle. Stir until smooth.
Place the pudding mass on the base. Flatten.
Lay out the apricot halves. Slightly drown.
Take out the second half of the dough. Grate on top with a coarse grater. Flatten.
Put to bake in an oven preheated to 190 degrees for 30-40 minutes. Willingness to check with a wooden skewer.
Let the cake stand in a baking dish for 10-15 minutes and then transfer to the wire rack.
Sprinkle with powdered sugar.
Cut the cooled cake into cakes.

Angela, a very tasty pie, but, as always, I had one protein in the refrigerator, I had to use it, I sent 1 yolk to the dough instead of 2 and 10g less flour, I sent the bottom cake in the form to the freezer, did not bake it beforehand, did not soften after baking. The dough is the most delicate, it did not work out smoothly and beautifully, it did not affect the taste. My shape is 24cm.
