"Sticky" buns

Sticky buns


dry yeast 3 g
wheat flour of the highest grade 300 g
milk 145 g
salt 4 g
sugar 40 g
yolk 1 PC
butter 40 g
vegetable oil 10 g
sugar 35 g
butter 25 g
cinnamon 2 tsp
sugar 100 g
salt 1/4 tsp
butter 50 g
pecans or walnuts 70 g
cinnamon 1 tsp
honey 1 tbsp. l

Cooking method

  • Sticky bunsMix yeast with flour (leave 1 tablespoon flour), add warm milk, sugar and yolk.
  • Sticky bunsKnead for 7-8 minutes. Add remaining flour, butter and oil.
  • Add salt to the dough 3-4 minutes before the end of kneading.
  • Sticky bunsKnead a soft, non-sticky dough.
  • Sticky bunsLeave the dough to ferment at room temperature for an hour and a half.
  • In the middle of fermentation, knead.
  • Sticky bunsFinely chop the nuts with a knife.
  • Sticky bunsCombine honey, sugar, salt and butter in a saucepan. Boil.
  • Sticky bunsRemove from heat. Add nuts and cinnamon, stir.
  • Sticky bunsCover the baking dish with baking paper. Pour the caramel, distribute over the bottom of the mold.
  • Sticky bunsKnead the finished dough, roll it into a layer 3-5 mm thick.
  • Brush with melted butter, sprinkle with sugar and cinnamon.
  • Roll up to make a long roll.
  • Sticky bunsCut the roll into washers. Place on caramel.
  • Sticky bunsProofing for about an hour under a plastic wrap at room temperature.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for the first 5-6 minutes, then lower the temperature to 180C (convection 160C) degrees and bring to readiness.
  • Leave the finished rolls in the form for 10-15 minutes, then turn over so that the caramel is on top.
  • Serve warm.

Why only serve warm? When will they cool down (or the next) day that they will no longer be edible? Or simply because they will not survive to cool down? 🤣

Edible, of course, and the next day. But then it is better to warm them up a little so that the caramel becomes softer.
