The second batch of pies was put into the oven for proofing for at least 20, temperature of 30 degrees ... well, and then baking as stated in the recipe. This batch did not open .. although some of the cakes were blown up dangerously at the seams. ... maybe someone will advise where you can get a master class on pinching pies.

Mouli, try to mold the patties as described above. And I always pinch the pie well and put it on a baking sheet with a stitch, so they will not open and they turn out smooth and even on top.

True, we changed it a little quantitatively, since for the first time, due to inexperience and carelessness, I put 600 grams of flour, which turned out to be 2 times more than necessary. Thank God, seeing that something was wrong, I guessed to count everything and added more milk, so, despite the mistake the first time, the dough turned out-)) I just had to re-install the program.

In general, we always have this alignment:
Milk - 400 ml
Flour - 600 gr
Margarine - 100 gr
Vegetable oil - 1 tbsp. l.
Sugar - 2 tbsp. l. (measuring spoon for the Moulinex 5004 oven)
Salt - 2 tsp (measuring spoon for the Moulinex 5004 oven)
I put yeast on the basis of what is written on the sachet - 1 sachet per 1 kg of flour, that is, a little more than half of the sachet is obtained. 1 sachet is a whole tablespoon that comes with the Moulinex 5004.

Here, we do not put an egg in the dough, only 1 for the coating.
After baking, sprinkle with milk (my grandmother always did this, so my mother and I, too, do not grease the baked goods with water (with a brush from the oven), but milk)
It turns out that we have 2 baking sheets of 18 pies each, for a total of 36.
The pies are simply delicious, we cook them regularly! -)))

After standing in the refrigerator for a couple of hours, the dough becomes plastic - super !!! and sculpt from it, whatever you want, and you can easily roll it out with a rolling pin if the handles are uncomfortable.
