Beef stew with prunes and couscous

Ingredients

Beef pulp 500 g
Pitted prunes 150 g
Olive oil
Bulbs 2 pcs.
Bell pepper 2 pcs.
Salt, ground black pepper,
turmeric, coriander, saffron, cardamom
Red wine 0.5-1 tbsp.
Couscous 1 tbsp.
Boiling water 1 tbsp.
Lime 2 pcs.

Cooking method

  • Wash the meat, cut into pieces, season and fry in olive oil. Add the onion, chopped with feathers and bell pepper. Simmer covered in its own juice, then add prunes and pour in red wine. Let the alcohol evaporate and simmer for another 30 minutes ...
  • In a deep bowl, combine the couscous, salt, pepper, turmeric, saffron, a couple of cardamom seeds, zest and juice of one lime. Pour boiling water over, close tightly, let stand for 5 minutes.
  • Put couscous on a large dish in the center, and beef in a circle. Sprinkle with herbs, nuts and lemon if desired.
