Ingredients

Rye flour 250 g
Wheat flour 300 g
Water 370 -390 ml
Salt 1.5 tsp.
Sugar 1.5 tbsp. l.
Yeast 1.5 h. L.
Kvass wort 2 rounded spoons
Coriander 1 tsp with a slide
Caraway 1 tbsp. l. without slide

Cooking method

  • Look at the water by the kolobok! Serpukhov flour had one thing, but before that I took it, I don't remember whose batch was spreading.

We put the bun in a hot bucket, quickly in the stove and let the dear one stand for an hour and a half. After the time has elapsed, we cut in for baking - 1 hour, that's all.

Note

Why lazy? Because you are too lazy to get to VDNKh and buy everything you need for a rye bread. And so without it.
It always turns out a wonderful high, porous, and the taste is ... a song! And the time is normal!

Well, really, I made some changes:
in warm water (380 g) diluted wort, sugar and 12 g of compressed yeast and poured 1 tbsp. l. apple cider vinegar. Poured vegetable oil (about 15-20 grams) into the bucket, poured the liquid (I have liquid first) and poured the sifted flour. The water turned out to be a bit too much; when mixing, I added 3 tablespoons of rye flour.
The kolobok was not perfect, or rather, it was, but it was very sticky and smeared a little on the bottom.
After kneading, I set the "Fast" mode (in my Rollsen it is 2h.10min, which = zmes, proofing, baking), then set the timer to 4h.30min. and went about her business. I really liked the result. Until you cut it, it cools down.

Thanks, the recipe is great! I have Supra -350, baked on the "sandwich" mode, it turned out amazing !!! So airy and fragrant! True, I crumpled the roof a little, I'll try to fix it next time.

By the way, the finished loaf turned out to be almost 900g
