Ingredients

Sour cream 25% 125 g
Water 0.5 cups (230 ml)
Wheat flour 3 cups (230 ml)
Salt 1 tsp
Sugar 3 tbsp. l.
Butter 2 tbsp. l.
Yeast 2 tsp
Roasted sunflower seeds (or sesame seeds) 0.3 cups

Cooking method

  • If the sour cream is thin, you can add flour according to Art. l.
  • (from 1 to 3) to the best kolobok formation.

I think that you shouldn't add kefir. There is bread completely on kefir. It tastes a little different. And in sour cream, the taste of sour cream should be felt, it is more delicate than kefir. The only way to add a little sourness is to take sour cream more sour. I also forgot to write that we are baking in the BASIC mode (3 hours 40 minutes) with a medium crust.

For sourness, you can replace 50-70 g of wheat flour from the total amount with the same amount of rye.

I always make dough for buns in a bread maker using the same technology - I throw everything into a mug except flour and butter, heat it to a steamy temperature and pour it into a bucket. Sifted flour and warm melted butter on top. Dough mode. I cut the finished dough, let it stand (30 minutes) and into the oven.
Oh, I completely forgot! Excuse me! Since in Germany all flour (white is no exception) is very low in gluten, I now always add 1 table to 500 grams of flour. a spoonful of gluten.
I rolled 8 balls from the dough and put them in a detachable mold with a diameter of 26 cm, allowed them to distance until they doubled and baked at T 200 °.
My measuring cup is 250 ml. I measured flour and water in it.

She laid out the form with baking paper.
From the dough (1st post, 900 g) I got two daisies with 7 balls each.
The balls should stick together during the proofing, if this did not happen, then you get just round single buns (I specially tried both options). Baked for about 20 minutes at 200 degrees. Before baking, she smeared the buns with yolk and sprinkled with sesame seeds.

It turned out very, very tasty!

I baked your bread, and I overlooked that in the recipe for water 0.5 cups from 230 ml - exactly 230 ml was thumped, I had to hastily adjust the amount of TOTAL during the kneading process, part of the premium flour (about 1/3 replaced with whole wheat wheat), in for all the rest, I kept the proportions from the author's recipe, instead of some seeds I added a mix of sesame + sunflower seeds + almond petals.The bread turned out to be tall, beautiful, with the thinnest crust (even slightly deformed when shaking the bread out of the mold onto the wire rack). Was taken out of the house and presented to the birthday girl, the taste is excellent!
