even ordinary table bread is considered sweet, but sourdough from the oven

familiar story. From cotton, all bread belongs to the category of buns, and only sourdough from the oven is required for FOOD.
Kenwood kneads dough perfectly, it's a sin to complain. Out of sports interest, I would, of course, personally work with Electrolux and compare the result. And so ... you can only guess what is better, what is worse ...
Kseny
It turns out that separate kneaders are only of industrial production from 10 liters, which is a pity
Should I buy another harvester just for the kneader?
Tell me, is he better at kneading dough than a bread maker?
How tangible and what is the difference in bread?
Zest
Kseny

Incomparably better. Moreover, it copes playfully with those types of dough that the bread maker cannot handle. This does not mean that x / n is bad, just each unit is intended for its own purposes.

If you are going to bake bread from wet dough in the oven, then it is difficult to do without a kneader.

came to report - the more I use my Bosch Mum 6N21, the more the big car is disappointed in it, and the small amount of dough kneads somehow selectively. some dough will collect to the center, and knead well, and yesterday kneaded 400g of flour (not so little), 175g of water and 2st. l. butter - and horror hooked on one mustache, pulls on the bowl, no kneading is observed. When I bought it, I immediately tried it on large batches of cakes - there were 2 kg of flour for kneading. I was very pleased then, and then I kneaded something small, I also seemed to do it, at least longer, and I had to tweak it a little with my hands. but after a long regular use - objectively, it is difficult to knead a small amount in it. it is necessary to stop all the time and raise the dough on hooks, otherwise it will not catch ...

By the way, I learned to knead with knives - a super way!
julifera
Lisss's, Thank you for writing

I still haven't bought it, I saw it in MegaMax, looked at it for a long time, decided to take it with a plastic bowl, it is more convenient to handle it

But then the money was spent on treatment and I went into the bins and dug up my kneader from the old Mriya combine.
I never used it and I forgot what I didn't like about it, so I refreshed my memory
After kneading the rye, I could not remove the lid of the kneader, I barely unscrewed it, I thought everything would freeze for centuries, the engine dripped after 15 minutes of kneading, I did not notice right away, and it poured into the cord compartment, it is clear that the old man has become and he needs to do prevention ...

In short, I slightly ruined the engine with this kneader, and before I calmly drove the coffee grinder on it, I didn't know the grinder and grief ...

So for now I decided to limit myself to bread dough kneaders

By the way, I learned to knead with knives - a super way!

What is it like? Tell me, please

julifera, I also have a harvester MRIYA - a beast machine!
There was a case and he stopped working for me. Repaired a couple of times already. The dough kneads great, especially for biscuits! 3-4 minutes and a cap of proteins! No mixer can compare with it!
I hold and love it for the tomato auger juicer. Very fast and convenient!
julifera
The engine from the plane must have been installed

The harvester is cool, if you take care of the engine, then it has no price
Parents use the auger juicer all their lives to the fullest, and mine was lost somewhere during the move, well at least I found a dough mixer.

Only for the rye dough it went very hard - if you know the design, you will understand what I mean - the dough was jammed under the top and the central retainer did not turn back when pressed, that is, it was impossible to remove it, I was puffing for about 15 minutes, I don’t know how, but barely starred. Now I'm sure I'm afraid to make such a heavy dough again.

Tanyusha
Girls, I need a dough mixer, because I bake sourdough bread and mix it with a mixer, but my mixer is low-power and manual, it makes no sense to buy an expensive harvester, I have everything separately, maybe someone has an idea of which unit I should buy for kneading the dough.
Lisss's
julifera, I'm so glad you haven't bought it yet, otherwise I was worried that I accidentally misled you

And about kneading with knives - first I read about this from Luda in LJ, then I bought this thing:

Kneading machines

bosch mmr 1501
I mix directly in a glass bowl with what is in the photo inside. on the side there is a disc for whipping whites and cream and an ice pick.

I'll tell you right away - you can knead only 200 dough in it, max. 250 g of flour - it doesn't stir anymore, the volume is small, 1.5 liters in total. the knives are too narrow, the motor overheats, and the dough crawls along the central pillar into the motor - well, he's not a specialized kneader, he's a chopper, I don't demand much from him

I coped with the dough crawling by putting this type of rubber circle with a hole in the middle (from the boxes for new CD-disks) on the post, and it keeps the dough at a certain level. with overheating of the motor - mesh with pulsating movements, so it lasts longer.

of the pros - you can knead until the gluten develops in it in a minute or a half! it is very fast and convenient. the kneading system is as follows - everything is dry on the bottom, twist a couple of times with knives to mix, then butter and very cold water - the knives heat it up a lot. and knead. right before our eyes in a couple of tens of seconds turns into a gorgeous dough.

I repeat - the unit in the picture is not ideal for these purposes. if anyone has better ideas for cars, I will be very grateful ...
Elenka
julifera, in my MRII at the gearbox (it seems that this is the name of this thing where the stirrers are attached) a transparent plate broke at the dawn of its operation. At first I was upset, and then I broke it completely and understood all the charm. You can throw in products without removing this reducer and without even turning off the batch.
Kneading yeast dough for a long time. I don't remember how it was. I did everything according to the instructions for the combine, I only remember that I did not know what to do with it when it got stuck in the lid.
In general, I think that a kneader needs a good large bowl and power.
Tanyusha
On Saturday, my daughter gave me a GASTRO QF-347 dough mixer, why did I write a dough mixer, not a mixer, under that name it was sold in Metro and knowing that I want such a unit, my daughter decided to give me a gift. On Sunday, I already tried it, the dough for the Basel bread was interfering, the testing went perfectly, the only drawback was noisy.
Tanyusha
julifera yes this is my unit.
Lisss's kneaded the liquid dough for 500 grams of flour, the ratio of water to flour is 86%, the dough was kneaded well, in general I am satisfied, I just don't know where to put it, my husband already says that it's time to make a kitchen from a large room, although I have a kitchen more than 10m.
Hairpin
Tanya 1962!

1. Congratulations!
2. And what about dumplings and noodles? And chak-chak?
3. How much?
Tanyusha
A hairpin, I think, will mix everything, but it costs almost 6,000 rubles. In the underground. For some reason, the power of the unit costs 0.65 - 1.0 kW, as I understand it, depending on the speed mode, an increase in power, only 5 speeds.
natalka
Cool stuff, but pricey. It's just a kneader, but it costs 6000. True, they all cost something like this. Here the girls in another topic discussed that in the Ukrainian Nikerman Bosch 4427 for only 2500 rubles, if all discounts are flattened, but not - so 3000. So for me this is it. And the bowl (only plastic) is the same 4 liters (slightly smaller than this one) is designed for 1 kg. flour, and a shredder to boot, and the price is a feast for the eyes. Only they are not sent to Russia.
Scarecrow
I understand that a lot depends on financial capabilities, but I try not to save on technology. How my KitchenAid sometimes mixes tough dough - I don't know how the machine with plastic parts will withstand it. At least how long he can stand. Kitchen weighs 11 kg and is completely iron, and even then manages to jerk like a blown.
natalka
The details, at least visible, the hooks and rims with fasteners are metal, and the plastic ones are the bowl and the outer casing of the case. He weighs something in the region of 5 kg. I don’t know how to work, but this is Bosch. And I decided to take a chance and buy it. I don’t know when he gets to me, but I’ll sign off on the results. And here Ukka already uses it and is very happy, but she did not write about the steep dough.
Scarecrow
Yes, I agree here. Any technique should be used wisely, and anything can be broken ... especially if you try ...

Then write your impressions.
Ukka
natalka, Scarecrow , girls!
I'm happy with my Bosch! I kneaded the yeast dough only once, the biscuit dough for the third - it kneads very well!
I agree that KitchenAid is a more serious car, but Bosch is also not bad! I believe that it is necessary to consider the advantages and disadvantages of the unit in relation to a particular situation - for our small family (2 people) it (Bosch) is more than enough. I don't bake every day and don't make dough, more than 1 kg of flour. And yet - whisk for whipping light dough - yes, with plastic inserts, but the hook is made of stainless steel and not cast, but from a rod (casting strength is less than that of rolled (rod)). But this is not the main thing - by the manufacturer (Bosch) the calculated break point is laid in the shaft design, in this place there is a part that is designed to protect the shaft from breakage.
Lisss's
I had a Bosch ProfiMix 47, I don’t remember, a jubilee release for the 50th anniversary of Bosch. great machine, for biscuit dough and protein custard - just wonderful. I changed it because the hook didn't knead the rye dough in any way. smeared on the walls, and no matter how you stick it back to the hook - after 5 seconds the same thing.
natalka
I also watched this Clathronic. Interesting. But you can get Bosch cheaper in Ukraine.

I sent the address to you in a personal, otherwise the tote from its length is distorted.

I think that it will be enough for the needs of an average family. It is unlikely that you will make dough from more than 1 kg. flour - this is how much this Boshik is designed for, and in addition a convenient shredder.
Gypsy
We have different kinds of blows for us, the more gadgets the more it costs. The cheapest one, only with stirrers, costs 400-something nis. But it is written that you can buy a meat grinder for him, and a shredder and so on.

girls, I have a Bosch 6N21. recorded a video of how he kneads the dough from 600 g of flour + 400 ml of milk, + another 50 grams of this. Since the batteries ran out 2 times for the recording, I laid out only the beginning and end, missed 5 minutes of the middle.
end of kneading, and take out the dough from the bowl ...
Gypsy
Lisss's, thanks for the video
Are you completely satisfied with the machine, does not it irritate that the dough is wound on numerous mixers and you have to pick it out?
Lisss's
Gypsy, the dough is wound on the stirrers if you knead a little dough. so now I'm buying another 5540, for small batches

this machine is good for kneading large quantities of dough and it does well in such cases. if you knead at least 1 kg of flour - everything kneads wonderfully, you don't have to remove anything, press it, etc.

it's bad that such a quantity of dough for our family is needed once a year - for Easter, when I bake cakes for all relatives here on the video - the very minimum, a batch of 600 g of flour, so there is more trouble. if the dough is even less, it is very problematic to knead in it, all the time you have to hang it back, and the mix does not go normal.

Gypsy
Thank you. I, too, am not a fan of large quantities .. in the family everyone loves fresh food, they don't eat very much in the evening. When I studied our processor market, I also looked at you, read reviews, and the people complained that it was inconvenient to extract the dough .. and the machine is not cheap. Of course, it's better to see it once. Thanks again for the video.
Deyrdre
Urrya! The idiot's dream has come true - I bought myself an Electrolux dough mixer. Yuzaty, of course, but he is a tank type by design, so I hope he will survive me.The first thing that struck me: in the pictures the case looks like plastic, in reality it looks very much like a ceramic one, like those of which the sinks are made. Surprisingly, the space is less than the 6th Bosch (mine is from the old, where the blender was installed in a separate slot, so the new ones are smaller), but it is higher. Deja (oh joy!) Is less than Boshevskaya, I mean the maximum capacity, although this fool weighs just not expansive to the mind. It copes with small volumes of dough flawlessly. I have not done more than 1.5 kg (and I will hardly be), while the results are just fine. The kneader goes over the bowl, it can be fixed in any position - it is very convenient to fill up what was missing in the process (with the bosh, everything always poured onto the top of the mixer, now the crooked handles can sleep peacefully). True, a very dense dough during kneading begins to push back the mixer, but for this there is a hook (of course, it's too lazy to put it, so I can't say anything about efficiency). In general, for bread, it is IMHO ideal, but for everything else, I can't complain about Bosch either
Lisss's
Deyrdre , and how much dough was kneaded at the least?

I also have a 6th Bosch, well, I bought a giant for small quantities of Bosch 5530, kneaded with knives - a song! I just filmed only the end of joy, I'll shoot the full process - I'll post it and let you know
Deyrdre
Uh, I will not say for sure, something about 400 grams in the end came out. But the dough did not smear on the walls at all, it rolled into a beautiful bagel. In general, he kneads slower than Bosch, but, in my opinion, somehow more qualitative, more gentle. It's very convenient to knead with a timer - everything is cut down by itself with an accuracy of a second. Unfortunately, I still can't film (there is nothing, and there is nothing to video), but if suddenly any special questions - please

I have such a nozzle for Bosch. Only I am somehow afraid to use it for the test, the process has a painfully brutal look (and besides, I, it was, I took it upon myself to catch the knife falling from her on the fly - I almost lost my fingers. I have not liked her since then) ... Well, her volume is very tiny ...
Lisss's
Deyrdre, I was so curious that I forgot to congratulate - on the purchase, let him try and be a good helper!

400g of dough is just our size, and at 5530 it is not a tiny volume at all, good - they write, you can knead up to 1 kg of flour ... I just bought it today, I myself can't say yet.

There, the fact is that all "semi-professional" recipes first say to mix everything on the "pulses" and make sure the consistency, and then stir at such and such a speed for so many minutes, and so that cycle in cycle! So I tend to be nervous

To be honest, none of her sourdough bread came out. It seems that her methods are not applicable to me, so I found myself a place where everything is chewed to the last: 🔗 and trying to progress slowly. And Teresa (the owner of this heavenly place) says that early development of gluten is undesirable for sourdough bread. With the price - no secrets - 160 levriks with delivery, but his timer handle was broken (torn off), my husband then "restored" it to me. And so, within 300 euros on the German eBee, these kneaders regularly appear, and even with a solid additional osnaska. Just look for Lux Küchenmaschinen (it seems so)

Ummm, and what kind of pictures I have filmed my last "Shedever" - before kneading, pre-autolysis and what happened ... I didn't scrape anything from the wall with my fingers - everything just stirred. True, I messed up with the water - instead of 166% of the sourdough I took 100% (so tired of raking puddles from the table in panic), but for some reason it turned out to be terribly cool, so it was a bit hard to interfere, but still successfully. With the video - unfortunately, nothing is expected

Show? To be honest, it wasn't a fountain. Of the guests, they were unexpectedly late by 2 hours, so the dough stood still, then the oven fired, in general, for a bad dancer, as they say ... it tasted interesting, only sour than we would like. Nothing, there is room to grow

Thank you very much for your advice. Are you talking about the starter version? I kneaded with a shrapper from Electrolux, then I folded all the recommended 35 minutes (with a scraper, of course). All the same, as a result, the dough was spreading absolutely inertly on the table in a vile puddle. Then, out of harm, I calculated the moisture content - 88% (and this is for the starter culture of 100% moisture, if you take 160% - I don't know what I would have done ...). In general, there must be some clever trick in this matter ...

Do not believe everything that they write, even if the manufacturers - his cup is less than Boshev's (from the inside in the sense). Even the little girl from whom I bought it told me that she was selling it, because she bought the 6th Bosch, the shob climbed more. But since the principle of mixing is different - the bucket is spinning, and the mixer is spinning by the dough itself, and the bucket is narrow and high - small portions no problem.
