Ingredients

Kefir 300 ml
(if liquid, then a little more and vice versa)
Wheat flour 550 g
Brown sugar (honey is possible) 1.5 tbsp. l.
Salt 2 tsp
Vegetable oil (olive or corn) 50 g
Dry yeast 1.5 tsp.

Cooking method

  • We place all the ingredients in the bowl of the bread maker according to the instructions.
  • During the first batch, we follow the "kolobok", if it is necessary to add kefir, then add carefully a tablespoon. The weight of the loaf is 750g (I set the weight to 1000g and the crust is dark - that's why it turned out to be so fried). Depending on the kefir, it can be sour. You can add a bag of vanilla sugar. As you like.

Tatyanushka, thanks for the recipe. Sour would not hurt. Yesterday I baked it in water without whey, add dry kvass - 2 tablespoons. It turned out to be very tasty and dark bread. I put 1 glass of rye flour and 1 glass of 1 grade of wheat, very tasty bread also turned out and fried well. They stopped taking the store, and I was already worried - my husband did not want to eat my first creations. Thank you!

What yeast did you use for the recipe? and what is the fat content of kefir?
For some reason, we didn't want the dough to stick together when kneading. I had to add kefir ... now we are waiting for the result :)

Olive oil - 50 ml (unchanged)
Pressed yeast, i.e. fresh - 15 g
Malt - 8 g (I like dark bread, I often throw malt)

Great recipe. It was baked with pressed yeast, all according to the recipe, the bun was simply obscenely indicative, the bread rose well, baked evenly, cut well, crumbled moderately.

fast-acting yeast 1.5 tsp. (I tried Levure-Minute - Macedonian in a vacuum package, I liked it more than the SAF-moment, and the price in Magnet is 4.60 rubles.)
granulated sugar - 2 tbsp. l.
salt - 1 tsp.
flour - 450 g. (I also take an inexpensive one - Kursk Yubileinaya or Lukhovitskaya 29.70 rubles for 2 kg)
semolina - 50 g. (to boost gluten if flour is unsure, or simply to boost gluten)
kefir 200-250 ml (in a measuring cup)
water 70-120 ml (up to 320 ml in the same glass, stir with kefir)
sunflower oil 2 tbsp. l.

Mode - basic (4 hours with leveling)
Size - L
Crust - medium

I reduced the ingredients exactly by half, the "dough" program, the LG-155 bread maker, a full cycle, at the end took out the bun, put it into a bowl greased with butter, on the "yogurt" program for 40 minutes. During this time, the dough has doubled in volume, took it out, slightly crumpled it, put it back in the bowl on the "baking" mode for 1 hour. After 30 minutes, I opened it, turned it over. At the end of the program, I took out a beautiful, fragrant and ruddy baby with a crispy crust, it is cut wonderfully, crumbles within normal limits, I really, really liked it. It's a shame that there is no way to insert a photo yet
