Ingredients

1 small fish, ideally a dorado 1 PC
White mushrooms 2 pcs
a tomato 1 PC
hard cheese 50-60 g
Pesto sauce
baselik 2-3 branches
parsley 2 twigs
hard cheese 60-70g
pine nuts 2 tbsp. spoons
garlic 3-4 teeth
vegetable oil 100-120 ml
salt

Cooking method

  • First, prepare the sauce:
  • Baselik, wash parsley, dry. Grate cheese. Grate peeled garlic or finely chop. Nuts optional: fry or use as they are.
  • Put all the ingredients in a cup and grind until smooth, faster with a blender, I grind with a mixer, I have it ancient, but there are absolutely wonderful attachments.
  • If you do not use all the sauce, it can be stored in an airtight container for 3-5 days. Well, if longer, then in the freezer for up to 1 month.

  • And now we are preparing the actual fish.
  • Peel and cut the fish from the back - remove the ridge. Chop off with a toothpick at the end, you get a boat.
  • Filling: boiled porcini mushrooms, peeled tomato cut into small cubes, grated cheese and pesto sauce. Place a couple of cloves of garlic where there were gills.
  • Bake for 20 minutes in a silicone mold or on oiled parchment.

Note

You can stuff fish with anything and how you want. I saw this method of stuffing in some culinary program. It turns out very elegant and festive.
