Sweets Soft roasted nuts

Ingredients

1/2 stack. (180g) honey
1 stack. (200g) sugar
2 tbsp. l. (no top, 12g) cocoa
300g shelled walnuts (chopped into medium pieces)
1/3 tsp citric acid or 2 tbsp. l. lemon juice
100g butter at room temperature (I used 80g)
200g dark chocolate to laze the finished candies

Cooking method

  • An excellent, tasty and quick recipe, I found it from Sony-Accountant here 🔗... Thanks to Sonya for such deliciousness
  • I did it once using Sonya's technology, and then changed it a little - it's easier this way
  • In a saucepan, mix honey, sugar and cocoa, put on low heat. When the mass boils, add citric acid and cook for 10 minutes. Add the nuts and cook for another 2-3 minutes, stirring constantly so as not to burn. Remove from heat, stir in butter.
  • Then everything is very fast if you have brown silicone molds for candy. We spread the resulting mass into molds, trying to scoop up from the bottom and sides - it cools down and caramelizes faster there, and the nuts can also float up, and at the end there will be one caramel in the candies. We put the molds in the refrigerator until they cool completely.
  • If there are no molds, we leave the mass until it cools well, but it will still be plastic. We roll up the candy balls, put on baking paper on a baking sheet and freeze in the refrigerator. If the mass was too warm, the balls will turn into cakes in the refrigerator ...
  • We take out the finished candies from the refrigerator. You can dip them in chocolate (melt the chocolate in a water bath), so they keep their shape better. I haven't been dipping lately - they are eaten too quickly
  • P.S. My friend, the son of a military man, said that he ate such sweets as a child - they were brought from Germany. I don't know, I don't know, he didn't let me try then

Delicious! Even tastier with chocolate

We can say that I have developed for myself a certain technology for the formation of sweets

First, I put the candy mass into molds and put it in the refrigerator overnight. You can do without a refrigerator, they already harden perfectly.

In the morning I took out candy from the molds and began:
1. First I decided to manually glaze over with chocolate. I suffered with hearts: I pricked sweets on toothpicks, dipped them in melted chocolate, shook these sweets to remove excess chocolate, stuck toothpicks with sweets into the foam for flowers, and put it all in the freezer for 5 minutes.
Quite a dreary task.
2. When I got tired of it, I decided to do it differently.
I dripped (half a teaspoon) chocolate into the candy tins and loaded the same candies into the chocolate tins, added some chocolate on top and put the tins in the freezer for 5 minutes.
I easily got out the candy. It turned out much faster and more beautiful.
Here is the result of my efforts:

All the same, special silicone molds for sweets make them shiny and beautiful.

Mold "Curly Hemisphere" SCG 03 I did not wash the molds before chocolate. I poured it in as it is. I got the sweets out of them so that no candy mass remained on the walls of the molds.
