Wheat bread with corn grits

Ingredients

Wheat flour, premium 425 g
Corn grits 75 g
Water 380 ml
Salt 1.5 tsp
Sugar 1.5 tbsp. l.
Rast. oil 1.5 tbsp. l.
Fresh yeast 13 g
Sour cream 1 tbsp. l.

Cooking method

  • I poured corn grits with water (200 ml), cooked for a couple of minutes and this porridge stood for 5 hours.
  • I crumbled this porridge into a bucket
  • press. yeast and sugar dissolved in 180 g of water
  • I will have to try to increase the amount of cereals, I did not dare.

Hell in Panasonic. Mode Basic, L, medium crust.

Note

Crispy thin crust, corn grains in bread are soft. Wish I have cornmeal, it would be better to replace some of the wheat flour.

Well, in general, I did it.
Baked sweet bread.
And I checked one more thing. I chopped off the frozen pressed yeast, poured it with water in a bucket, then poured all the dry ingredients on top and set it on the timer for 9 hours.
In the morning, waking up just before baking, I looked at the dough, it rose normally.
Baking on Diet mode. But for some reason, when baking, the bread became lower than it rose. Instead of going up yet. Why does this happen?

Recipe as it is folded into a bucket.
1. Pressed frozen. yeast - 13 g - in a bucket
2. Poured 180 ml of water
3. Premium wheat flour - 275 g, semolina - 50 g, oatmeal - 100 g
4. Corn grits - 75 g, cooked 2 min. in 200 ml of water
5. Sugar - 4 tbsp. l., salt - 1 tsp.
6. Oil pump. - 3 tbsp. l.
7. Powdered milk - 2 tbsp. l.
8.1 egg
9.In the dispenser - 50 g of raisins

Diet program, raisin regimen, timer for 9 hours.

The bread turned out to be low, and I did not understand why it went down when baking, although the dough went well.
The crust is crispy (from corn), the crumb, although dense, is dry and tasty.

Question - are 200 ml of water for cooking cereals subtracted from the specified amount of water or not?
I didn't consider. The bread was disgusting. Due to the large amount of water, it turned out to be very wet. Accordingly, when baking a donkey. The groats are tough. Although the idea is interesting. We need to work out the recipe.
